Indian pulao is a delicious one-pot rice dish that’s popular all over India. It’s typically made with fragrant basmati rice, spices, vegetables, and sometimes meat or poultry. Here’s a simple recipe to make pulao:
Ingredients:
Basmati rice 2 cup (washed and soaked for 30 minutes)
2 tbsp ghee or oil
1 bay leaf
1 cinnamon stick
3-4 cloves
3-4 cardamom pods
1 onion, sliced
1 tsp ginger paste
1 tsp garlic paste
1-2 green chilies, slit
Mixed vegetables (carrots, beans, potatoes, Peas) 1 cup
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp garam masala
Salt, to taste
4 cups water
Instructions:
- Heat ghee or oil in a heavy-bottomed pan. Add bay leaf, cinnamon stick, cloves, and cardamom pods and fry for a few seconds until fragrant.
- Put sliced onions in pan & fry until they turn golden.
- Add ginger paste, garlic paste, and green chilies and fry for another minute.
- Put mixed vegetables in cooking pan fry for 4 minutes.
- Add cumin seeds, coriander powder, garam masala, and salt. Mix well.
- Drain the water from the soaked rice and put it in the pan. Fry for 2-3 minutes, stirring frequently.
- Add 4 cups of water and bring to a boil.
- Lower the heat, cover the pan, and cook for 15-20 minutes or until the rice is cooked and the water has been absorbed.
- Let the pulao rest for 5 minutes after turning off the heat.
- Fluff the rice with a fork and serve hot with raita or your favourite curry.
