Braided Bun Chicken Burger: The Taste of My Grandmother’s Hands and My First Attempt

When I first decided to make this Braided Bun Chicken Burger, the first thing that came to my mind was my grandmother (Nani). Nani always used to say that the real skill lies in the braiding of the bun. But when I stepped into the kitchen, I realized it wasn’t as easy as it looked.

The biggest difficulty arose when the bun dough became very sticky, and the shapes didn’t look right while braiding. I thought perhaps I wouldn’t be able to do it, and I was worried that the look of the burger would be ruined.

But then, I remembered some tips given by Nani and made some changes to cover up these difficulties:

  • Controlling the dough: I learned that if the dough is sticky, it is necessary to add a little dry flour and knead it well so that it becomes smooth.

  • Braiding technique: While braiding, I kept the dough slightly cool, which made it very easy to create shapes and hold the bun.

  • Perfect proofing: I stopped rushing and allowed the dough to proof in a warm place until it doubled, which gave the bun a very soft and airy texture.

Today, when I make this Braided Bun Chicken Burger, that first moment of frustration has become a beautiful lesson. For me, this recipe is not just a meal, but memories of my childhood spent with my Nani, which helps overcome every small hurdle in the kitchen.

  • 1 tsp White pepper powder or cracked black pepper
  • 1 tsp Paprika or mild red chili powder
  • 1 tsp Salt adjust to taste
  • 1 tbsp Heavy cream or melted butter keeps the chicken mince moist

Equipment

  • 1 Deep Frying Pan or Kadhai Required for frying the golden, crispy French fries
  • 1 Large Glass Mixing Bowl For combining the ground chicken mince with your fresh spices, garlic-garlic paste, and cream without overworking the meat
  • 1 Heavy Non-Stick Skillet or Cast-Iron Frying Pan Essential for searing the chicken patties to get that beautiful golden crust

  • 1 Chef’s Knife & Cutting Board: For slicing the fresh tomatoes, cutting the crisp lettuce, and splitting the braided knot buns evenly

  • 1 Rustic Wooden Serving Board or Platter For presenting the final restaurant-style burger and fries combination beautifully before taking your blog photos

Method

  1. Method
  2. Phase 1: Preparing the Chicken Patties
  3. Mix the Meat: In a large mixing bowl, combine the ground chicken, minced onion, ginger-garlic paste, white pepper, paprika, salt, and heavy cream. Mix gently with your hands until just combined—do not overwork the meat, or the patties will become tough.
  4. Shape: Divide the mixture into 4 equal portions. Shape them into smooth, round patties slightly wider than your braided buns, as chicken patties tend to shrink slightly during cooking. Press a slight dimple into the center of each patty to prevent them from puffing up.
  5. Chill: Place the patties on a tray lined with parchment paper and chill in the refrigerator for 10–15 minutes to firm up.
  6. Phase 2: Searing the Patties & Toasting Buns
  7. Cook the Patties: Heat 2 tablespoons of oil in a heavy non-stick skillet or cast-iron pan over medium-high heat. Place the chilled chicken patties in the pan. Cook for about 4–5 minutes on the first side until a deep, golden-brown crust forms. Flip and cook for another 4 minutes until completely cooked through (internal temperature reaches 74°C/165°F). Remove and let them rest for 2 minutes.
  8. Toast the Buns: Slice your braided knot buns horizontally. In the same pan with the residual juices, place the buns cut-side down for 1 minute until lightly toasted and warm.
  9. Assembly & Presentation
  10. Base Layer: Place the bottom half of the toasted braided bun on a rustic wooden serving board or white plate. Spread a generous tablespoon of mayonnaise or garlic aioli.
  11. The Fresh Crunch: Lay a thick slice of juicy tomato followed by a crisp, folded piece of fresh green lettuce.
  12. The Star Element: Place the hot, pan-seared chicken patty directly over the lettuce.
  13. The Sauce Crown: Drizzle a generous amount of classic tomato ketchup over the warm patty so it beautifully cascades down the sides.
  14. Finish: Top with the distinctive braided knot bun crown and press down gently.
  15. Serving Suggestion
  16. Serve immediately alongside a generous helping of hot, salted golden French fries and a side dipping bowl of garlic sauce or honey mustard.
