  • 2/3 cup unsalted butter, chilled and cut into small pieces

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. To make the crust, combine the flour and salt in a large mixing bowl. Add the butter and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Add the ice water, one tablespoon at a time, and mix until the dough comes together in a ball.
  4. Roll out the dough on a floured surface and place it in a 9-inch pie dish. Trim the edges and set them aside.
  5. In a large pot, boil the potatoes until they are tender. Drain the water and mash the potatoes with the milk and butter until smooth. Season with salt and pepper to taste.
  6. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned. Add the onion and garlic and cook until softened.
  7. Stir in the tomato paste, Worcestershire sauce, and beef broth. Bring the mixture to a boil and then reduce the heat to low. Simmer for 5–7 minutes until all water is reduced.
  8. Simmer for another 2–3 minutes, or until the mixture has thickened.
  9. Pour the beef mixture into the prepared pie crust. Spread the mashed potatoes on top of the beef mixture, using a fork to create a decorative pattern. Sprinkle the chopped parsley over the top.
  10. Bake the pie in the preheated oven for 25–30 minutes, or until the crust is golden brown and the filling is heated through.
  11. Remove from the oven and let the pie cool for a few minutes before slicing and serving with extra mashed potatoes on the side.
