My kitchen is always a place of constant hustle, but that day, I felt a strange sense of indecision. Chicken mince was sitting on the counter, and I felt like I was standing at a crossroads. My hands were so used to making Smash Burgers—it had become my daily routine to press the meat onto a hot pan to get those perfectly crispy edges.

But that day, my heart was searching for something new. I looked at the mince and thought, “I make Smash burgers all the time; why not try something different today?” My mind kept drifting toward those thick, golden, restaurant-style Battered Burgers with their signature crispy coating.

With a mix of nervousness and excitement, I decided that today would be the day for the “Battered Burger.” I pulled up the Food Fusion recipe and began following their steps carefully. I prepared that thick, rich batter using flour, cornflour, and rice flour. As I dipped the chicken patty into the batter and rolled it through the breadcrumbs, I realized just how satisfying the whole process felt.

When the first patty finally came out of the frying pan, its beautiful golden color and that incredible crunch made all my tiredness vanish instantly. I took the first bite and… WOW! It was so juicy on the inside and so incredibly crispy on the outside that I was blown away.

  • -Chicken breast boneless ½ kg
  • -Chicken thigh boneless ½ kg
  • -Lehsan powder Garlic powder 1 tsp
  • -Paprika powder ½ tbs
  • -Dried thyme 1 tsp
  • -Kali mirch powder Black pepper powder 1 tsp
  • -Namak Salt 1 tsp or to taste
  • -Dried parsley 1 tsp
  • -Chicken powder 1 tbs
  • -Soy sauce 2 tbs
  • -Anda Egg 1
  • -Doodh Milk ¼ Cup
  • -Bread 4-5 slices
  • -Breadcrumbs 1 Cup or as required
  • -Maida All-purpose flour ½ Cup
  • -Cornflour 4 tbs
  • -Chawal ka atta Rice flour 4 tbs
  • -Namak Salt ½ tsp or to taste
  • -Kali mirch powder Black Pepper powder 1 tsp or to taste
  • -Anda Egg 1
  • -Water ½ Cup or as required
  • -Cooking oil for frying
  • Assembling:
  • -Tomato ketchup
  • -Salad patta Lettuce leaves
  • -Tamatar Tomato slices
  • -Pyaz Onion rings
  • -Mayonnaise
  • -Cheese slice
  • -Jalapenos
  • -Mustard sauce

Equipment

  • 1 Electric Food Chopper/Processor For blending the meats, spices, and bread slices into a smooth mince.
  • 1 Large Mixing Bowls (2-3) One for the dry flour mix.
  • 1 Round Cutter (approx. 3.5 - 4 inches) To get that uniform, professional "restaurant look" for your 80g patties.
  • 1 Large Frying Pan A wide, flat-bottomed non-stick or cast-iron frying pan is best for even heat distribution.
  • 1 Baking Sheet/Tray To hold the patties in the freezer during the initial 6–8 hour set.
  • 1 Wire Cooling Rack (Optional but Recommended)
  • 1 Spatula/Turner

Method
 

  1. Directions:
  2. -In a chopper,add chicken boneless,garlic powder,paprika powder,dried thyme,black pepper powder, salt,dried parsley,chicken powder,soy sauce,egg,milk and chop until well combined.
  3. -Add bread slices and chop again.
  4. -Grease hands with oil,take a mixture (80g) and make a ball.
  5. -With the help of round cutter (grease with oil),press the mixture and set into patty shape & freeze for 6-8 hours (makes 18 Burger patties).
  6. -In a bowl,add breadcrumbs & set aside.
  7. -In a bowl,add all-purpose flour,cornflour,rice flour,salt,black pepper powder and mix well.
  8. -Add egg,water and whisk well to make a smooth batter.
  9. -Now dip burger patty in prepared batter then coat with breadcrumbs.
  10. -Can be stored in freezer for up to 1 month in airtight box/zip lock bag.
  11. -In frying pan,heat cooking oil and fry burger patties on low flame from both sides until golden brown.
  12. Assembling:
  13. -On burger bun,add tomato ketchup,lettuce leaves,tomato slices,onion,mayonnaise,burger patty,cheese slice,jalapenos,mustard sauce and top with another bun & serve!
