Quick Veggie Sliders: My Secret to Party Hosting without Stress

Hello, my name is Fozia. For the longest time, I had been thinking about hosting a small party for the kids in our family. When the blessed month of Ramadan arrived, it felt like the perfect opportunity. My eight-year-old daughter had kept her first Roza, and I wanted to make her Roza Khushai a truly joyful memory.

We all know that children are happiest when they are surrounded by their own age fellows. So, I decided to invite all her cousins, age fellows, and classmates. I knew the menu had to be kid-friendly but special. That’s when I decided to make mini burger sliders for the little guests.

Since I am a dedicated content creator and love following precise culinary channels, I chose to follow a specific recipe from Amrita Raichand’s YouTube channel. These veggie and chickpea patties turned out absolutely fantastic—the flavor was incredible and the texture was perfectly crispy. It was the definition of “chatkhara” (tangy and spicy) that I love!

The party was a great success, and the best part was seeing all the children enjoying their meals.

The “Mini” Surprise

The most interesting thing happened the next day! I started receiving calls on my mobile from the other children’s mothers. They were all calling with the same urgent question: “Fozia, can you please share the recipe for those mini burgers?”

One mother told me that her child went home and insisted, “Mom, you have to make those mini burgers exactly like Fozia Aunty did. They were the best I’ve ever had!” I was so delighted to hear this! I happily shared the full recipe with everyone, making sure to let them know that I adapted it from Amrita Raichand’s wonderful channel.

This Roza Khushai taught me that sometimes, the smallest bites (like a well-made mini burger) can make the biggest impression, especially on kids. It was a beautiful day of celebration, sharing, and a little bit of “Fozia Aunty’s” viral food styling!

The Mishap: The difficulty started with the zucchini and chickpeas. In my rush to get everything ready before the girls arrived, I didn’t squeeze the grated zucchini enough. When I mixed it with the mashed chickpeas and potatoes, the mixture was far too soft. When I tried to shape the first few “mini” patties, they weren’t holding their cute slider shape—they were flattening out and sticking to my hands!

The Cover-up: I knew the clock was ticking, so I had to act fast. I didn’t want to start over, so I quickly toasted some extra breadcrumbs and folded them into the mix to soak up the excess moisture. To make sure they didn’t break in the pan, I popped the tray of shaped patties into the freezer for a “quick chill” while I set the table. This firmed up the butter and starch perfectly.

When it came time to fry, I used a slightly higher heat to ensure the cornflour slurry seared into a “crust” immediately, locking the moisture inside.

The Result: By the time the kids sat down, the burgers looked like they came straight out of a professional food shoot! The patties were golden-crisp on the outside and tender on the inside. Seeing those girls enjoy every bite—and later hearing that their mothers were getting “requests” for the same burgers—made every bit of the kitchen stress worth it.

  • Mashed & boiled potato - ½ cup
  • Boiled chickpeas - 1/2 cup
  • Grated zucchini - ¼ cup
  • Grated carrot - ¼ cup
  • Paprika/ Chilli powder - 1 tsp
  • Turmeric powder - ½ tsp
  • Chaat Masala - 1/2 tsp
  • Salt & Pepper to taste
  • Oil - 2 tbsp
  • Cornflour slurry
  • Bread crumbs
  • For caramelized onions
  • Sliced Onions - 2-3
  • Sugar - 1 tbsp
  • Butter - 1 tbsp
  • For Assembly
  • Mini Burger Buns - 4
  • Lettuce Leaves - a Few
  • Sliced Tomato - 1
  • Mayonnaise - 2 tbsp
  • Ketchup - 2 tbsp
  • Cheese Slices - 4

Equipment

  • 1 Heavy-Bottomed Non-Stick Skillet
  • 1 Wide Shallow Frying Pan
  • 1 large mixing bowl
  • 1 Small Prep Bowls

Method
 

  1. -For caramelized onions in a hot pan, add butter, sliced onions. Cook till they caramelize on a low flame. After you see a little color on the onions, add sugar & let them caramelize till the onions are nicely done.
  2. -In a large bowl, add the boiled chickpeas, mashed potato, carrot, zucchini & the dry masalas..Combine well to form patties
  3. -Make a slurry with cornflour & water.
  4. -Make small-sized patties dip them in the slurry, then coat with bread crumbs..
  5. -In a pan heat oil & shallow fry the patties till golden & crisp on both sides. Remove on absorbent paper & keep aside.
  6. -Add little butter in the same pan as the caramelized onions & toast the burger buns.
  7. For The Assembly
  8. -Mix ketchup & mayonnaise in a small bowl & apply on all the buns.
  9. -Place the base of the bun on a platter, add lettuce leaves, followed by the tomato slice, patty, cheese slice & finally the caramelised onions. Cover with top of the bun and seal with zucchini slices & cherry tomatoes on a toothpick. Make many as no one will stop at one

Notes

Pro Tip:Zucchini is almost 95% water. If you grate it and mix it directly, your patties will turn into a soggy mess in the pan. The Tip: After grating the zucchini, sprinkle a tiny pinch of salt over it and let it sit for 2 minutes. Then, place it in a clean kitchen towel and squeeze it with all your strength until no more water comes out.
