Today I had planned to make qeema. I put in a lot of effort to make qeema from beef pieces myself, and pulled out all the spices.

When I put the qeema into the hot pan, it instantly turned into small clumps and stuck together. Seeing this, for a moment I felt that perhaps today the qeema wouldn’t roast properly and the texture would be ruined. But instead of losing heart, I immediately grabbed a spoon in the pan and started breaking apart those stubborn clumps.

After a little effort, the entire qeema became completely separate, loose, and had a grainy texture. Seeing this brought relief, and I left it to cook further so that every single fiber could cook thoroughly from the inside.

And when the qeema was completely tender and cooked through, I added all the special spices mentioned in the recipe that are the heart of this dish. When the roasting of the qeema began with the spices, such a wonderful and amazing aroma spread that the whole kitchen was scented! The sequence of spices and the magic of roasting when cast upon the qeema brought the flavor right out—and honestly, it turned out so delicious that on the very first bite, all my hard work felt completely worth it.

  • Beef qeema mince: 750g
  • Adrak lehsan paste Ginger garlic paste: 1/2 tbs
  • Iodized Himalayan pink salt: 1tsp or to taste
  • Tamatar Tomatoes: 4-5 medium, halved
  • Hari mirch Green chillies: 5-6, slitted
  • Dahi Yogurt: 1/3 Cup, whisked
  • Kali mirch Black pepper: 1/2 tsp, crushed
  • Kasuri methi Dried fenugreek leaves: 1/2 tsp
  • Adrak Ginger: Julienne (for garnish)
  • Hara dhania Fresh coriander: Chopped (for garnish)

Equipment

  • 1 Wok (Karahi) or deep frying pan
  • 1 Cooking spoon / spatula
  • 1 Measuring Cups and Spoons
  • 1 Knife and Cutting Board

Method

  2. Seer the Mince: Heat the cooking oil in a traditional wok over medium heat. Add the beef mince and mix well. Cook until the meat changes color entirely.
  3. Aromatic Base: Stir in the ginger-garlic paste and pink salt. Continue cooking on medium flame for 2-3 minutes to remove the raw garlic aroma.
  4. Tomato Infusion: Place the halved tomatoes over the mince. Cover the wok with a lid and let it simmer on low flame for 8-10 minutes until softened.
  5. Mash and Blend: Remove the lid, peel away and discard the softened tomato skins, then mash the remaining tomato pulp well into the qeema.
  6. Green Chillies Layering: Add the slitted green chillies, mixing thoroughly, and sauté on medium flame for 4-5 minutes.
  7. Yogurt Incorporation: Pour in the whisked yogurt. Stir well and cook on medium flame for 4-5 minutes until the oil naturally separates from the masala.
  8. Final Seasoning: Sprinkle in the crushed black pepper and dried fenugreek leaves (kasuri methi). Toss on high flame for 2-3 minutes to lock in the robust flavors.
  9. Garnish & Serve: Garnish with fresh ginger juliennes and chopped fresh coriander. Serve piping hot alongside freshly baked naan.

Notes

Pro Tip:Perfect Oil Separation: When adding the whisked yogurt, keep the flame on medium and avoid covering the wok. Stir continuously until the yogurt completely blends into the masala and the oil naturally floats to the surface, which ensures a rich, glossy finish without curdling.
