- Instructions
- Seer the Mince: Heat the cooking oil in a traditional wok over medium heat. Add the beef mince and mix well. Cook until the meat changes color entirely.
- Aromatic Base: Stir in the ginger-garlic paste and pink salt. Continue cooking on medium flame for 2-3 minutes to remove the raw garlic aroma.
- Tomato Infusion: Place the halved tomatoes over the mince. Cover the wok with a lid and let it simmer on low flame for 8-10 minutes until softened.
- Mash and Blend: Remove the lid, peel away and discard the softened tomato skins, then mash the remaining tomato pulp well into the qeema.
- Green Chillies Layering: Add the slitted green chillies, mixing thoroughly, and sauté on medium flame for 4-5 minutes.
- Yogurt Incorporation: Pour in the whisked yogurt. Stir well and cook on medium flame for 4-5 minutes until the oil naturally separates from the masala.
- Final Seasoning: Sprinkle in the crushed black pepper and dried fenugreek leaves (kasuri methi). Toss on high flame for 2-3 minutes to lock in the robust flavors.
- Garnish & Serve: Garnish with fresh ginger juliennes and chopped fresh coriander. Serve piping hot alongside freshly baked naan.
Notes
Pro Tip:Perfect Oil Separation: When adding the whisked yogurt, keep the flame on medium and avoid covering the wok. Stir continuously until the yogurt completely blends into the masala and the oil naturally floats to the surface, which ensures a rich, glossy finish without curdling.
