Some dishes are not just food, they are an occasion. For my family, chicken karahi is exactly that. Whenever we plan a get-together, someone always says, “Karahi toh banegi na?” And the answer is always yes.

The karahi in this photo was made on one of those days. We had planned a small outdoor lunch, the naans were wrapped in foil to stay warm, and I cooked the chicken in my old iron karahi, the same one that has been with me for years and has turned dark from all the love it has seen. When I put it on the table with ginger and green chillies on top, everyone just picked up a piece of naan and started eating straight from the karahi. No plates, no formality. That is how karahi is meant to be eaten.

This is my everyday chicken karahi: no onions, lots of tomatoes, ginger, green chillies and a good hit of black pepper. Simple ingredients, but cooked on high heat until the masala clings to every piece.

Why You Will Love This Chicken Karahi

  • Restaurant taste at home: bold, tangy and peppery, just like a good roadside karahi.
  • No onions needed: the masala is made only with tomatoes, so it is quick and clean in flavour.
  • One pot: cooked and served in the same karahi.
  • Ready in under an hour: perfect for guests and weekend lunches.

Ingredients You Need

  • Chicken: Small karahi-cut pieces with bone stay juicy and give the best flavour.
  • Tomatoes: The base of the masala. Use ripe, red tomatoes.
  • Ginger and garlic: As a paste in the masala, plus julienned ginger on top.
  • Spices: Red chilli, chilli flakes, turmeric, coriander, cumin, black pepper and garam masala.
  • Kasuri methi: A small pinch at the end gives that dhaba aroma.
  • Green chillies and coriander: For freshness and heat.

Tips for the Best Chicken Karahi

  • Use high heat: Karahi is all about bhunai. Cook on high heat and keep stirring.
  • No water: The chicken cooks in its own juices and the tomatoes.
  • Cook tomatoes until they melt: Press them with the spatula until no chunks remain.
  • Wait for the oil to separate: That is the sign the masala is fully cooked.
  • Add ginger and chillies twice: Half in the last minutes of cooking, half fresh on top.

        Notes

Use small karahi-cut pieces with bone for the best flavour. Do not add water: the chicken cooks in the tomato juices. A wide iron karahi gives the best results because the masala reduces quickly.

        Frequently Asked Questions

Do you add onions to chicken karahi?

Traditional Pakistani chicken karahi is made without onions. The masala is made only with tomatoes, which gives it a tangy, fresh taste.

        Can I use boneless chicken?

Yes, but reduce the cooking time so it does not dry out. Chicken with bone gives a richer flavour.

        Why is my karahi watery?

Either too many tomatoes or not enough bhunai. Keep cooking uncovered on high heat until the masala thickens and oil separates.

        Should I peel the tomatoes?

No need. The skins come off while cooking and you can pick them out if you want a smoother masala.

What to serve with chicken karahi?

Hot naan, tandoori roti or chapati, with a simple salad and raita on the side.
