Curry pakora is a popular appetizer in South Asian cuisine. It is prepared by combining gram flour, sometimes referred to as chickpea flour or besan, with a number of spices and finely chopped vegetables including onions and spinach. The mixture is then formed into small balls or patties and deep-fried until crispy and golden brown.
Curry pakoras can be enjoyed on their with white rice. Ingredients for Curry Pakora Pakistani Recipe:
For the curry:
- 2 tbsp oil
- 1 onion, chopped
- 1 tsp cumin seeds
- 1 tsp fenugreek seeds
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 1 cup yogurt
- 1 cup gram flour ( Besan )
- 1 tsp salt
- 2 tsp red chili powder
- 1 tsp tsp turmeric powder
- 8 cups water
- 2 tbsp Curry leaves (Murraya koenigii)
For the pakoras:
- 1 cup chickpea flour
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 cup water
- 1 cup chopped spinach leaves
- 4 Fresh Green Chilies ( cut in slices )
- 1/2 cup chopped onion
- 1/2 cup water for making a thick better
- Oil for frying
For the Tarka:
- 1/2 cup oil
- 1/2 tsp Cumin seeds
- 1 tbsp Whole Red Chili
- 2 tbsp Curry Leaves
- 1 tbsp Onion Sliced
Instructions:
Before cooking you put 1 cup yogurt, 1 cup gram flour & 4 cup water in blender machine. Then mix until all mixture mix together.
- To make the curry, heat the oil in a pan over medium heat. Add the onion, cumin seeds, fenugreek seeds and sauté for 5 minutes or until the onion is soft.
- For a further two minutes, add the ginger and garlic.
- Add the salt, red chili powder, turmeric powder and sauté for 1 minute.
- Add the yogurt and gram flour mixture in pan. Pour 4 cup remining water in it. Reduce the heat, stir continuously with spatula until it begins to boil.
- cover it with lid and let it simmer for 40 minute.
- To make the pakoras, mix the chickpea flour, cumin seeds, coriander powder, red chili powder, salt, and baking soda in a bowl.
- Add the water and mix until smooth.
- Add the spinach, green chilies and onion & mix well. Then consistency of the better should be thick.
- For frying, heat oil in a deep pan.
- Drop spoonful of the pakora mixture into the hot oil and fry until golden brown.
- Drain the pakoras on a paper towel.
- When curry in pan cooked well. Taste it if you like taste according to your taste buds. Turn off the burner.
- Then put all pakora in cooked curry, mix well.
- Take frying pan put tarka oil, sliced onion, cumin seeds, whole red chilies & curry leaves. Stir continuously until all spices turn crispy & golden in hue.
- Pour all tarka oil on cooked curry.
