Stuffed aloo parathas are my absolute favourite, and I always make them with great care. Crispy on the outside, savoury spiced potatoes inside, and a hot cup of chai on the side. Especially in rainy weather, a hot paratha in that cool breeze feels extra special.
One day I thought of giving this tradition a little twist. I had some leftover spiced chicken in the fridge, so along with the boiled potatoes I added the chicken, a little capsicum and a generous handful of cheese. When that paratha came off the tawa and I took the first bite, it felt like an explosion of flavours.
The photo shows exactly how it looks when you cut it: golden, crispy layers of whole wheat paratha, with melted cheese, tender chicken and green capsicum peeking out from the inside. My family loved every single bite, and since that day the breakfast request at home is always the same: “Today it has to be that cheese chicken paratha!”
Why You Will Love This Paratha
- A complete meal in one: chicken, potatoes and cheese wrapped in whole wheat paratha.
- Crispy and cheesy: golden outside, melty and stretchy inside.
- Perfect for leftovers: leftover chicken tikka or boti works beautifully.
- Lunch box favourite: kids love it with ketchup.
My Tips for Perfect Stuffed Parathas
- Keep the filling dry. Cook the chicken until there is no water left, and let the potatoes cool before mixing.
- Use two circles of dough and seal the edges well, so the filling does not leak while rolling.
- Roll gently with a little dry flour, and never press hard in the middle.
- Cook on medium heat so the paratha turns crisp and the cheese has time to melt.
What to Serve With It
Serve with cool raita, green chutney, ketchup or a cup of chai. If you love parathas, try my spicy aloo paratha, keema paratha, gobhi stuffed paratha and my guide to make-ahead frozen lacha paratha.

Method
- Mix the atta, salt and oil, then add water little by little and knead into a soft, smooth dough. Cover and rest for 20 minutes.
- Heat the oil in a pan, add the chicken and ginger garlic paste and fry for 2-3 minutes.
- Add the red chilli powder, crushed red chilli, haldi and salt. Cook on medium heat for 8-10 minutes until the chicken is cooked through and dry. Add the lemon juice and let it cool. Shred or chop into small pieces.
- In a bowl, mix the mashed potatoes, cooked chicken, capsicum, onion, green chillies, dhania, zeera powder, chaat masala and salt.
- Gently fold in the shredded cheese. Divide the filling into 4 equal portions.
- Divide the dough into 8 balls. Roll two balls into thin circles of the same size.
- Spread one portion of filling on one circle, leaving a small border. Cover with the second circle and press the edges firmly to seal.
- Dust with flour and roll gently to an even thickness, taking care not to tear it.
- Cook on a hot tawa on medium heat. When small bubbles appear, flip, brush with ghee and cook both sides until golden, crisp and the cheese melts inside.
- Cut into wedges and serve hot with raita, ketchup or green chutney.
Notes
Frequently Asked Questions
Why does my stuffed paratha tear while rolling?
The filling is too wet or there is too much of it. Keep the filling dry and cool, use two dough circles, and roll gently with dry flour.
Which cheese is best for paratha?
Mozzarella melts and stretches best. Cheddar adds more flavour, so a mix of both is perfect.
Can I use leftover chicken?
Yes. Leftover chicken tikka, boti or even shredded chicken from a salan (with the gravy dried off) works very well.
Can I freeze stuffed parathas?
Yes. Cook them lightly on both sides without ghee, cool, stack with butter paper in between and freeze for up to a month. Cook from frozen with ghee.
Can I make it without chicken?
Yes. Simply skip the chicken and make a classic aloo cheese paratha with the same filling.
