In our house, winter officially begins the day the first bag of deep red desi carrots comes home from the market. Grating them takes a while, and my hands always turn orange, but nobody minds, because everyone knows what is coming. A big pot of gajar ka halwa slowly bubbling in milk fills the whole house with the smell of cardamom and ghee, and by evening the children are already standing near the stove with spoons.

My gajar ka halwa is made the traditional way: carrots cooked slowly in full-cream milk until the milk is completely absorbed, then bhuno-ed in ghee with sugar until glossy, and finished with khoya for richness and almonds on top. It takes time, but there are no shortcuts that taste the same.

If you love traditional desserts, try my creamy firni, or for a winter evening with family, pair it with a cup of pink tea.

Why You’ll Love This Gajar ka Halwa

  • Classic winter taste: made with fresh red desi carrots at their sweetest.
  • Rich and creamy: milk, ghee and khoya give it a melt-in-the-mouth texture.
  • Make ahead: it keeps well in the fridge and tastes even better the next day.
  • Perfect for guests: a dessert everyone in Pakistan loves.

Ingredients You Need

Carrots: red desi winter carrots, peeled and finely grated. They are sweeter and give a deeper colour than orange carrots.

Milk: full-cream milk for a rich, creamy halwa.

Ghee and sugar: desi ghee gives the best flavour.

Khoya: crumbled khoya (mawa) for richness. You can use milk powder instead.

Flavour and garnish: green cardamom and almonds, plus pistachios if you like.

My Tips for the Best Gajar ka Halwa

  1. Use red desi carrots. They are juicy and sweet in winter and give the classic colour.
  2. Grate finely. Fine grating helps the carrots cook evenly and soak up the milk.
  3. Use a heavy, wide pot. It stops the milk from burning and helps it reduce faster.
  4. Cook the milk out completely before adding sugar. Sugar added too early keeps the carrots hard.
  5. Bhuno in ghee at the end. This gives the halwa its glossy look and deep flavour.
  6. Add khoya last. Mix it in for the final few minutes so it stays soft and creamy.

How to Serve

Serve warm in winter, topped with almonds and pistachios. For a special touch, serve it with a scoop of vanilla ice cream, or with a spoon of fresh cream on the side.

Storing and Reheating

Keep in an airtight box in the fridge for up to a week. Reheat in a pan with a spoon of ghee or a splash of milk. It also freezes well for up to 2 months.

Servings: 8 people
Course: Dessert
Cuisine: Pakistani

Ingredients

  • 1 kg red carrots peeled and finely grated
  • 1 litre full-cream milk
  • 1/2 cup desi ghee
  • 3/4 cup sugar or to taste
  • 150 g khoya crumbled, or 1/2 cup milk powder
  • 6 green cardamoms crushed
  • 1/4 cup almonds whole or halved, for garnish
  • 2 tbsp pistachios chopped, optional

Method

  1. Add the grated carrots and milk to a heavy, wide pot. Bring to a boil, then cook on medium-low heat, stirring now and then, until the milk is completely absorbed and the carrots are soft, about 50 to 60 minutes.
  2. Add the ghee and crushed cardamom and bhuno on medium heat for 8 to 10 minutes, stirring continuously, until the halwa turns glossy.
  3. Add the sugar and cook for 10 minutes. The sugar will release moisture at first; keep stirring until it dries up again.
  4. Add the crumbled khoya and mix well. Cook for 3 to 4 minutes until creamy.
  5. Garnish with almonds and pistachios and serve warm.

Notes

Add sugar only after the milk is fully absorbed, so the carrots stay soft. Red winter carrots give the best colour and sweetness.

Frequently Asked Questions

Can I make gajar ka halwa without khoya?

Yes. Use 1/2 cup milk powder instead, or simply cook the milk a little longer for a creamy texture.

Why is my halwa not soft?

The sugar was probably added before the milk was fully absorbed. Always cook the carrots completely soft in milk first, then add sugar.

Can I use orange carrots?

Yes, but the halwa will be less sweet and lighter in colour. Add a little extra sugar if needed.

How much halwa does 1 kg of carrots make?

About 6 to 8 servings, depending on portion size.

Can I make it in a pressure cooker?

Yes. Cook grated carrots with half the milk for 1 whistle, then open and cook off the rest of the milk before adding sugar, ghee and khoya.
