My Ultimate Boiled Gobhi Stuffed Paratha: The Viral 2026 Comfort Food Trend

Jump to RecipePrint Recipe

Gobhi parathas have always been one of my favorite parathas, but whenever I make them in this slightly different and easy way—where the cauliflower is lightly boiled so that salt and turmeric infuse it with color and flavor—the taste becomes something else entirely. After boiling, when it is thoroughly strained, dried, and cooled, all the dry and green spices combine to make this filling so zesty and delicious that every single bite warms the heart!

While making gobhi parathas, the biggest difficulty I used to face was that the moisture present in the cauliflower made the filling wet, which not only caused the paratha to tear while rolling out but also ruined the texture and crispiness on the skillet. To overcome this difficulty, after boiling the cauliflower with salt and turmeric, I strained it thoroughly and spread it out on a clean cloth so that all of its extra moisture dried completely and it cooled down. Once the filling was completely dry and perfect, I mixed in all the dry and green spices and easily prepared an amazing, zesty paratha!

Ingredients

  • Ingredients
  • Whole Wheat Dough: 2 cups divided into 8 equal portions for 4 parathas
  • Cauliflower Gobhi: 1 medium head (cut into medium florets)
  • For Boiling: Water 1/2 teaspoon salt, and 1/4 teaspoon turmeric powder (haldi)
  • Green Fresh Spices: 2 green chilies finely chopped, 1 teaspoon fresh ginger (grated), and 2 tablespoons fresh cilantro (dhaniya, chopped)
  • Dry Spices: 1/2 teaspoon cumin powder 1/2 teaspoon red chili flakes or powder, 1/2 teaspoon chaat masala or amchur, and salt according to taste
  • Ghee or Butter: 3 to 4 tablespoons for shallow frying

Equipment

  • 1 Grater or food processor
  • 1 Mixing Bowl
  • 1 Rolling pin and clean floured surface
  • 1 Heavy-bottomed skillet or tawa
  • 1 Spatula

Method

  1. Step-by-Step Instructions
  2. Boil the Cauliflower: In a saucepan, bring water to a boil along with 1/2 teaspoon salt and 1/4 teaspoon turmeric powder (haldi). Add the cauliflower florets and let them boil for about 4 to 5 minutes until they are tender yet firm (not overly mushy).
  3. Drain, Dry, and Cool: Strain the boiled cauliflower completely through a colander. Spread the florets out on a clean cotton cloth or paper towel to let them dry out completely and cool down to room temperature.
  4. Mash and Spice: Once cooled and completely dry, finely chop or lightly mash the cauliflower in a mixing bowl. Add all the green fresh spices (chopped green chilies, grated ginger, fresh cilantro) and dry spices (cumin powder, red chili flakes, chaat masala, and salt). Mix everything thoroughly until the filling becomes wonderfully chatpata and flavorful.
  5. Stuff the Paratha: Take two small portions of the prepared whole wheat dough and roll them out into equal-sized small circles. Place a generous spoonful of the chatpata boiled gobhi filling in the center of one circle, leaving a small clean border around the edges. Cover with the second circle and press the edges firmly to seal them completely.
  6. Roll Out Gently: Lightly dust your work surface with flour. Gently roll out the stuffed paratha to an even, medium thickness, taking care not to press too hard so the savory filling stays securely inside.
  7. Pan Fry to Golden Perfection: Heat your skillet or tawa over medium heat. Place the rolled paratha onto the hot surface. Once small bubbles begin to appear, flip it over and brush generously with ghee or butter. Fry on both sides until they turn crisp, golden-brown, and delightfully flaky.
  8. Serve: Cut into warm wedges and serve immediately with fresh creamy raita and a side of traditional pickle!

Notes

Pro Tip:Drying is Key: After boiling the cauliflower with salt and haldi, ensuring that it is completely drained and air-dried of any residual moisture before adding the spices is the ultimate secret. This keeps the dough from tearing and guarantees a super-crisp, flavorful paratha every single time!
