There is a sweet little child in my house named Kiran. Her eating habits are a bit unique—she doesn’t like green leafy vegetables at all, nor does she eat meat. If it were up to her, she would just eat potatoes all the time.
In situations like this, when something else is cooking for everyone else and Kiran insists on her favorite food, I immediately have to make something that cooks quickly so she doesn’t stay hungry.
At times like that, my biggest secret is my Instant Pot. I quickly cut potatoes into 1-inch cubes, put 1 cup of water and a steamer basket into the Instant Pot, and place the cubed potatoes inside. I just cook them on high pressure for 3 to 4 minutes and then do a quick release.
In just a few minutes, delicious, soft, and hot potatoes are ready, which Kiran eats with great delight and it makes my job easy too.
To cook cubed sweet potatoes in an Instant Pot, follow these simple steps for tender, perfectly cooked results:

Add Water: Pour 1 cup of water into the inner pot of the Instant Pot.

Insert Trivet: Place a steamer basket or the metal trivet inside the pot.

Add Sweet Potatoes: Place 1-inch cubed sweet potatoes directly into the steamer basket (or right on the trivet if using a basket with fine mesh so they don’t fall through).

Pressure Cook: Secure the lid, make sure the valve is set to Sealing, and cook on High Pressure for 3 to 4 minutes:

3 minutes: For firmer cubes that hold their shape well in salads, grain bowls, or hash.

4 minutes: For very tender cubes that easily mash or blend into soups.

Release Pressure: Once the cooking cycle finishes, do a Quick Release by carefully turning the valve to Venting to release the steam immediately. This prevents them from becoming mushy.
