Summer was at its peak, and on a sweltering afternoon in Sukkur, I was craving something cold. I remembered my childhood, when my Nani used to make Falsa Sharbat for me. I decided it was time to relive those old memories today.
I went to the kitchen and started preparing, but the real challenge began when I turned on the blender. The first time, I blended the falsas for so long that the seeds were crushed too! The result? The drink turned bitter. I felt like all my hard work was wasted, but then I remembered my Nani’s words—she always said that falsas need a “gentle” treatment.
I didn’t give up. I quickly prepared a new batch, and this time, I only ran the blender for a few seconds to ensure only the pulp separated. The straining process was a bit difficult because I wanted to give the drink a completely “transparent” and “watery” look. I used a muslin cloth (malmal) and strained it very patiently so that no traces of the seeds would get through.
When the deep purple, ice-cold drink was finally in the glass with two ice cubes floating in it, I was overjoyed! My hard work had paid off. - Prep the Berries: Carefully remove any small stems or debris from the falsas. Rinse them thoroughly under cold running water two to three times to ensure all dirt is washed away.
- Load the Blender: Put the cleaned falsas, sugar, black salt, regular salt, and just 1 cup of the chilled water into a blender jug.
- Blend Gently: Blend the mixture for about 1 to 2 minutes just until the pulp separates from the seeds. Tip: Do not over-blend, or the seeds will crush and make the drink taste bitter.
- Strain the Mixture: Pour the blended pulp through a fine-mesh strainer or a piece of cheesecloth into a large pitcher. Use the back of a spoon to press down firmly, extracting every bit of the vibrant purple juice while leaving the seeds behind.
- Dilute and Adjust: Pour the remaining chilled water into the strained juice and stir well. Taste the drink at this stage and adjust the sugar or black salt to your preference.
- Serving Suggestion
- Place a couple of ice cubes into a tall serving glass, pour the watery, semi-transparent dark purple drink right up to the top, and serve immediately while it's ice-cold!
