When I decided to make this refreshing strawberry mint lemonade, I thought it would be a breeze, but as soon as I stepped into the kitchen, a few minor challenges popped up.

The first difficulty arose while making the mint syrup; to infuse the sugar syrup with the mint aroma in a perfectly balanced way, I kept it on low heat, realizing that overcooking it could ruin the color of the syrup. I immediately lowered the heat and removed it at the exact right time, giving it a full thirty-minute steeping time so the extract came out nicely without any bitter taste.

The second challenge came while straining the seeds during strawberry blending, because I didn’t want seeds in the drink yet I didn’t want to lose any flavor. For this, I used a fine-mesh strainer to gently sift the puree, which made the texture completely smooth and professional.

Then, when it was finally time to mix the lemon juice, water, and mint syrup, balancing the sweetness and tartness proved to be an art. Instead of pouring all the syrup in at once, I added it a little bit at a time while tasting along the way, until it created the exact, perfectly refreshing drink that is absolute perfection for the summer heat.

  6. Remove the saucepan from the heat and allow the mint to steep for 30 minutes.
  7. Pour the cooled simple syrup through a strainer into a clean mason jar or bottle, discarding the mint (or reserving a few leaves for garnishing).
  8. Blend the Strawberries
  9. In a blender, combine 1/4 cup of lemon juice with the fresh strawberries and blend well.
  10. Pour the blended mixture through a strainer into a pitcher to remove the berry seeds (optional: you may leave the seeds in if you prefer a textured drink).
  11. Mix and Chill
  12. Add the remaining lemon juice and 2 to 3 cups of water to the pitcher with the strawberry puree and stir well.
  13. Pour in the prepared minted simple syrup to taste and stir thoroughly.
