My Bao Buns Struggle: Sudden Trouble and Quick Fixes!
When I thought about making Spicy Chili-Garlic Chicken Bao Buns, I figured everything would be easy, but two major difficulties came up in the kitchen:
-
Difficulty 1 (Chicken Releasing Water): While cooking the chicken, an excessive amount of water came out, and instead of frying, it started boiling.
-
Cover-up 1: I immediately turned the heat to high, removed the lid, and dried out all the water. Once the juices dried up and the chicken got a nice color, I mixed in the mayonnaise and spring onions, resulting in a perfectly creamy filling.
-
Difficulty 2 (Buns Becoming Soggy): Due to staying in the steamer too long, some buns became slightly damp and soggy at the bottom.
-
Cover-up 2: I removed them immediately and placed them on a kitchen towel. During assembly, I doubled up the lettuce leaf slightly at the base, which gave the buns both structural support and a fresh crunch.
Result: After a little bit of trouble, high heat and proper timing saved the day, and delicious, soft bao buns were ready!

Method
- Step-by-Step Instructions
- Step 1: Steam the Bao Buns
- Arrange your bao buns in a steamer basket lined with parchment paper to prevent sticking.
- Steam over boiling water for about 5 to 7 minutes until they are piping hot, incredibly soft, and fluffy. Keep them covered to retain moisture while you prepare the filling.
- Step 2: Cook the Spicy Chili-Garlic Chicken
- Heat 2 tablespoons of oil in a wok or skillet over medium-high heat. Add the minced garlic and ginger, sautéing until fragrant and lightly golden.
- Add the cubed boneless chicken, tossing well until it changes color and cooks through (about 6 to 8 minutes).
- Stir in the soy sauce, hot sauce, red chili flakes, salt, and black pepper. Toss the chicken vigorously on high heat until the sauce coats each piece and reduces nicely.
- Remove from heat, stir in the mayonnaise for a rich, creamy coating, and fold in the fresh chopped spring onions.
- Step 3: Assemble and Serve
- Gently open each warm, steamed bao bun like a taco shell.
- Line the inside with a small, crisp lettuce leaf to add a fresh crunch.
- Spoon a generous portion of the spicy chili-garlic chicken filling directly into the center of each bun.
- Garnish with an extra sprinkle of chili flakes or chopped spring onions and serve immediately!
