- Boil the Mangoes: In a pan, add the 1 cup of water and the raw mango chunks. Cover and cook on medium heat for about 5 to 7 minutes until the mango pieces are just tender, but not completely mushy.
- Prepare the Tempering (Bhog): In a separate small pan, heat 1 tablespoon of oil or ghee. Add the cumin seeds, fennel seeds, kalonji, and fenugreek seeds. Let them crackle for a few seconds until fragrant.
- Create the Syrup: Add the sugar directly into the boiling mango and water mixture. Stir continuously until the sugar completely dissolves and forms a clear, slightly thick syrup.
- Combine and Simmer: Pour the tempered spices into the boiling mango-sugar syrup. Add the black salt, regular salt, and red chili. Mix gently.
- Thicken: Let the lonji simmer on low heat for another 5 minutes so the mangoes absorb the sweet-and-tangy flavors without losing their shape.
- Cool and Store: Turn off the heat and let it cool completely. The syrup will thicken further as it sits. Transfer to a clean glass jar and refrigerate.
