  • Sugar: 1 cup adjust according to the tartness of the mangoes
  • Water: 1 cup
  • Fennel Seeds Saunf: 1 tsp
  • Cumin Seeds Jeera: 1 tsp
  • Nigella Seeds Kalonji: 1/2 tsp
  • Fenugreek Seeds Methi Dana: a small pinch
  • Red Chili Powder or Flakes: 1/2 tsp use Kashmiri chili if you want color control, or skip for a completely pale look
  • Turmeric Powder: A tiny pinch just enough to avoid a dull gray, or omit entirely for a clearer syrup
  • Black Salt Kala Namak: 1/2 tsp
  • Normal Salt: 1/4 tsp
  • Oil or Ghee: 1 tbsp

Equipment

  • 1 Cutting Board & Knife For peeling and cutting the raw mangoes into wedges.
  • 1 Saucepan / Cooking Pan For boiling the mangoes and preparing the syrup.
  • 1 Small Pan / Tadka Pan For heating the oil or ghee and tempering the spices.
  • 1 Spatula or Spoon For stirring the syrup and mixing the ingredients.
  • 1 Clean Glass Jar For storing and refrigerating the finished lonji.

Method
 

  1. Step-by-Step Instructions
  2. Boil the Mangoes: In a pan, add the 1 cup of water and the raw mango chunks. Cover and cook on medium heat for about 5 to 7 minutes until the mango pieces are just tender, but not completely mushy.
  3. Prepare the Tempering (Bhog): In a separate small pan, heat 1 tablespoon of oil or ghee. Add the cumin seeds, fennel seeds, kalonji, and fenugreek seeds. Let them crackle for a few seconds until fragrant.
  4. Create the Syrup: Add the sugar directly into the boiling mango and water mixture. Stir continuously until the sugar completely dissolves and forms a clear, slightly thick syrup.
  5. Combine and Simmer: Pour the tempered spices into the boiling mango-sugar syrup. Add the black salt, regular salt, and red chili. Mix gently.
  6. Thicken: Let the lonji simmer on low heat for another 5 minutes so the mangoes absorb the sweet-and-tangy flavors without losing their shape.
  7. Cool and Store: Turn off the heat and let it cool completely. The syrup will thicken further as it sits. Transfer to a clean glass jar and refrigerate.

Notes

Pro Tip:Master the Sugar-to-Water Ratio: If your raw mangoes are extra sour, avoid adding more water. Instead, dissolve the sugar slowly in the initial 1 cup of liquid to maintain a rich, glossy syrup that clings perfectly to the mango wedges without becoming overly watery.
