My Journey to the Perfect Chicken Salami: Lessons from the Kitchen
I’ve always been a fan of Ashus Delicacies on YouTube; her recipes are so precise and delicious! So, when I decided to try her Homemade Chicken Salami, I thought it would be a breeze. While the final result was absolutely “chatkhara” and better than store-bought, my journey to getting that perfect slice had a few bumps along the way.
The Challenges I Faced
1. The “Texture” Trouble When I first blended the chicken, the paste looked a bit grainy and wasn’t as smooth as the one in Ashus’s video. I realized my chicken wasn’t cold enough, and the blender was heating up the meat.

The Cover-up: I immediately stopped, put the chicken paste in the freezer for 15 minutes, and then blended it again with the ice-cold water from the recipe. It turned into a silky-smooth emulsion instantly!
2. The “Watery” Incident While steaming, I was worried that water might leak into my salami roll. My first wrap wasn’t tight enough, and I noticed a bit of moisture getting under the butter paper. In video Ashus use a ceramic cup to make salami shape but I followed rolling and foiling technique for making salami shape.

The Cover-up: I quickly pulled it out and added a tight layer of aluminum foil over the butter paper, twisting the ends like a candy wrapper to create a waterproof seal. It saved the salami from becoming soggy!
3. The “Crumbly” Slice I was so excited to see the result that I tried to slice it while it was still warm. Big mistake! The slices started crumbling instead of staying in perfect circles.

The Cover-up: I forced myself to be patient. I put the roll in the fridge and left it overnight. The next morning, it had “set” perfectly, and I could cut slices as thin as a professional deli.

The Verdict: Even with these hiccups, the flavor was 10/10! Following Ashus’s ingredients with a bit of my own “trial and error” made this a signature recipe in my kitchen.

- Part 1: The Chicken Salami Process
- The Emulsion: Place the 500g Boneless Chicken in a food processor. Add the Garlic Paste (1 tsp), Black Pepper (½ tsp), Red Chili Powder (1 tsp), Sugar (½ tsp), Fresh Cream (1 tbsp), and Salt (1 tsp).
- The Secret Texture: While the processor is running, slowly pour in the ½ Cup Ice Cold Water. This binds the fats and liquids to create that smooth, professional deli texture.
- The Folding: Remove the smooth paste from the processor and put it in a two separate bowl. In one bowl hand-mix in the Chopped Coriander, Chopped Olives, Boiled Sweet Corn, and Chopped Capsicum. This ensures the vegetables stay intact for a beautiful cross-section when sliced. In other bowl keep mince as simple paste according to your choice.
- Filling Mince and Sealing: Place the mixture in the ceramic cup make sure few drops of oil spread anywear in the cup. cover with butter paper.
- Steaming: Place the log in a steamer over boiling Water for 25–30 minutes.
- The Critical Chill: Allow it to reach room temperature, then refrigerate for at least 4 hours. This is essential; cutting it while warm will cause it to crumble.
- Part 2: The Signature Dressing & Assembly
- The Sauce: In a bowl, whisk together the 1 Cup Mayonnaise, ¼ Cup Tomato Sauce, ¼ Cup Chili Sauce, 1 Tsp Garlic Paste, 2 Tsp Lemon Juice, ½ Tsp Black Pepper, and ¼ Tsp Salt.
- Bread Prep: Slice your bread and toast it lightly with Butter in a pan.
- Building the Sandwich:
- Spread a generous layer of the Special Sauce on the bread.
- Layer the Lettuce, Tomato slices, Cucumber, and Onion Rings.
- Slice your chilled Chicken Salami into thin circles and stack them high.
- Add more sauce on the top slice of bread and close the sandwich.
