- Part 1: The Chicken Salami Process
- The Emulsion: Place the 500g Boneless Chicken in a food processor. Add the Garlic Paste (1 tsp), Black Pepper (½ tsp), Red Chili Powder (1 tsp), Sugar (½ tsp), Fresh Cream (1 tbsp), and Salt (1 tsp).
- The Secret Texture: While the processor is running, slowly pour in the ½ Cup Ice Cold Water. This binds the fats and liquids to create that smooth, professional deli texture.
- The Folding: Remove the smooth paste from the processor and put it in a two separate bowl. In one bowl hand-mix in the Chopped Coriander, Chopped Olives, Boiled Sweet Corn, and Chopped Capsicum. This ensures the vegetables stay intact for a beautiful cross-section when sliced. In other bowl keep mince as simple paste according to your choice.
- Filling Mince and Sealing: Place the mixture in the ceramic cup make sure few drops of oil spread anywear in the cup. cover with butter paper.
- Steaming: Place the log in a steamer over boiling Water for 25–30 minutes.
- The Critical Chill: Allow it to reach room temperature, then refrigerate for at least 4 hours. This is essential; cutting it while warm will cause it to crumble.
- Part 2: The Signature Dressing & Assembly
- The Sauce: In a bowl, whisk together the 1 Cup Mayonnaise, ¼ Cup Tomato Sauce, ¼ Cup Chili Sauce, 1 Tsp Garlic Paste, 2 Tsp Lemon Juice, ½ Tsp Black Pepper, and ¼ Tsp Salt.
- Bread Prep: Slice your bread and toast it lightly with Butter in a pan.
- Building the Sandwich:
- Spread a generous layer of the Special Sauce on the bread.
- Layer the Lettuce, Tomato slices, Cucumber, and Onion Rings.
- Slice your chilled Chicken Salami into thin circles and stack them high.
- Add more sauce on the top slice of bread and close the sandwich.
