There’s something about the first sound of rain hitting our tin rooftop that still takes me straight back to my grandmother’s kitchen. The moment the clouds rolled in, she’d already be reaching for her old brass bowl, mixing besan with just the right pinch of spices, her hands moving with a kind of practiced ease that only comes from decades of doing something you love. Within minutes, the whole house would fill with the sound of sizzling oil and that unmistakable nutty aroma of besan turning golden — and one by one, everyone would drift into the kitchen, drawn by the smell before anyone even called out that the pakoras were ready. To this day, I can’t watch rain fall without thinking of her standing at that stove, feeding an entire house full of people with nothing more than a bowl of gram flour, a few spices, and all the love in the world.
Pakora (Crispy Vegetable Fritters)
Pakoras are arguably the most famous and beloved dish made with gram flour. These golden, crispy fritters combine finely sliced vegetables with a spiced besan batter, making them a staple street food and rainy-day snack across South Asia.

Ingredients

Gram Flour (Besan): 1 cup

Vegetables: 1 large onion (thinly sliced) and 1 medium potato (julienned or thinly sliced)

Greens: 2 green chilies (finely chopped) and 2 tbsp fresh coriander leaves (chopped)

Spices: 1/2 tsp cumin seeds, 1/2 tsp crushed coriander seeds, 1/2 tsp red chili powder, 1/4 tsp turmeric powder, and 1/2 tsp carom seeds (ajwain, crushed between palms)

Seasoning & Water: 1/2 tsp salt (or to taste) and approx. 1/3 cup water

Oil: For deep frying
Step-by-Step Instructions

Prepare the Base: In a large mixing bowl, combine the sliced onions, potatoes, green chilies, and coriander leaves. Add the salt and all spices, tossing the vegetables so they absorb the seasonings.

Make the Batter: Sprinkle the gram flour over the spiced vegetables. Mix well with your hands. Gradually add water, a tablespoon at a time, until a thick coating clings tightly to the vegetables (avoid adding too much water, as onions release their own moisture).

Fry to Golden Perfection: Heat oil in a deep pan or kadhai over medium heat. Drop small, bite-sized portions of the coated vegetable mixture into the hot oil. Fry for 4–5 minutes, turning occasionally, until golden brown and crispy.

Drain & Serve: Remove with a slotted spoon, drain on paper towels, and serve piping hot with mint-coriander chutney or tamarind sauce.
