There are certain flavors that you just never forget, whether they come from a five-star hotel or a humble roadside food stall. It has always been my ultimate goal and kitchen mission to recreate every single dish whose awesome flavor captures my heart out in the world, bringing it back to my own kitchen to make it just as good—if not better.
This unique and gourmet Seekh Kabab Sub Sandwich comes with a very beautiful memory of its own. A while ago, during a journey, I had to make a brief stop at a busy bus station. Right there, at a tiny little food stall, the aroma of kababs grilling over open flames was so incredibly intoxicating that I simply couldn’t resist. I ordered their signature kabab sandwich. The moment I took that very first bite, the combination of the crusty baguette bread, the piping hot, juicy seekh kabab, and that unique white garlic sauce drizzle was so absolutely mind-blowing that I stood there at the station already planning out exactly how I would recreate this home!
Once I got back home, I set out to make it, but the moment I stepped into the kitchen, I faced a few unique difficulties that truly put my culinary skills to the test:
The First Challenge: Getting the Perfect Kabab Texture At the bus station, the kabab was incredibly juicy and melt-in-your-mouth soft on the inside. However, when I tried making it at home, the minced beef refused to stick to the skewers and kept breaking apart. I panicked for a split second, but then I remembered a classic, time-tested trick my grandmother used to use! I popped the mince back into the food processor to grind it finer, then kneaded it by hand for 5 minutes with a tablespoon of cornstarch and a touch of cold butter. I then patted them completely dry before assembling them at the base of the bread.
When I finally layered those juicy seekh kababs over the crisp vegetable bed inside the warm baguette, added a side of golden french fries, and finished it with a gorgeous zig-zag drizzle of my magical garlic sauce, it looked like an absolute masterpiece. Taking that first bite felt like a trip right back to that busy bus station, except this time, the flavor was cleaner, fresher, and vastly superior.
The kitchen challenges were real, but winning this little culinary battle and watching my family lick their fingers clean made every bit of the effort completely worth it. It just goes to prove that with a little determination, no flavor is impossible to recreate at home!

- Knead the mixture firmly with your hands for 4–5 minutes until it becomes sticky. Divide the meat mixture into two equal portions and press them around your skewers, shaping them into long, uniform cylinders.
- Step 2: Grilling the Seekh Kababs
- Heat 1–2 tablespoons of oil in your cast-iron skillet over medium-high heat.
- Place the skewers on the pan. Cook for about 10–12 minutes, turning them occasionally to ensure all sides develop a beautiful, dark brown charmark. Baste with a little butter during the final minutes to lock in the moisture. Slide them off the skewers carefully once cooked.
- Step 3: Preparing the Garlic-Mayo Sauce
- In a small bowl, whisk together the mayonnaise, yogurt, garlic powder, lemon juice, and white pepper until it forms a glossy, pourable consistency.
- Step 4: Toasting and Assembling the Baguettes
- Slice your baguettes open. If desired, lightly toast the inner crumb facing down on the same kabab pan to soak up the residual smoky juices.
- Build a colorful bed of crunchy shredded red cabbage, tomato slices, and white onion rings inside the bread base.
- Place a whole, hot seekh kabab right on top of the vegetable bed.
- Step 5: The Showstopping Drizzle
- Generously drizzle the creamy garlic sauce over the hot kabab in a neat zig-zag pattern, exactly like the premium presentation shown in the image.
- Serve immediately on a wooden table setup next to a heap of hot, salted french fries and an extra side bowl of garlic sauce and spicy red chutney.
