I have always found joy in the kitchen, and if there is one dish that has a special place in my heart, it is the burger. For me, discovering a new taste is just like meeting a new person. You say hello through your senses, and if the chemistry is right, you want to meet again and again.
One day I was looking for something different and came across a copycat of the famous Red Robin Whiskey River BBQ Burger on YouTube. A smoky whiskey glaze, a spiced beef patty and a pile of crispy onions. I knew straight away this was not an ordinary burger, and I wanted to try it in my own kitchen.
When I took the first bite, it was tangy, smoky and full of that chatkhara flavour we love. That day the Whiskey River BBQ Burger became one of my favourites, and I have been making it again and again ever since. Below is my version, with the changes I made after a few tries.
What Is the Red Robin Whiskey River BBQ Burger?
It is one of the best-known burgers at Red Robin, the American restaurant chain. A juicy beef patty is topped with crispy onion straws, pickles, tomato and mayo, and finished with their sweet and smoky Whiskey River BBQ sauce. At home you can make every part from scratch, and the sauce is honestly the star.
Why This Copycat Works
- Homemade whiskey BBQ sauce: onion, garlic, ketchup, brown sugar, vinegar and liquid smoke simmered until thick and glossy.
- Spiced patties: paprika, chilli, cayenne and mustard powder give a bold flavour without hiding the beef.
- Crunch in every bite: crispy onion straws on top and shredded cabbage underneath.
- Alcohol-free option: apple juice works beautifully in place of whiskey.
The Problem I Faced (and How I Fixed It)
The first time, my patties started breaking on the pan and the onions went soggy. Two small changes fixed everything:
- Chill the patties for 20-30 minutes before cooking. The fat firms up, so they hold their shape. Do not flip them until a dark crust has formed.
- Sauce goes last. Put the onions on the patty first and drizzle the sauce on top. If the sauce goes underneath, the onions lose their crunch.
Can I Make It Without Whiskey?
Yes. Replace the whiskey with the same amount of apple juice and add one extra tablespoon of vinegar. You still get the deep, sweet and tangy flavour. Simmering reduces alcohol but does not remove all of it, so if you avoid alcohol completely, the apple juice version is the one to make.
How to Layer the Burger
- Toasted bottom bun with mayonnaise
- Tomato slice and shredded cabbage
- Hot spiced patty (with cheese, if you like)
- Pickles
- Crispy onion straws
- Whiskey River BBQ sauce, then the top bun
What to Serve With It
We eat it with crispy homemade fries and a little bowl of the extra sauce for dipping. If you love burgers as much as I do, try my tips for juicy beef patties, my smash burger, the caramelized onion burger or my creamy Thousand Island sauce.

Ingredients
Equipment
Method
- Heat the oil in a saucepan on medium heat. Add the onion and garlic and cook for about 3 minutes until soft.
- Pour in the whiskey (or apple juice), turn the heat up and simmer for 5-8 minutes until it reduces by about half.
- Stir in the ketchup, tomato paste, vinegar, Worcestershire sauce, brown sugar, liquid smoke, salt and pepper.
- Lower the heat and simmer for 20 minutes, stirring now and then, until the sauce is thick, dark and glossy. Let it cool.
- Mix the paprika, chilli powder, cayenne, onion powder, mustard powder, black pepper and salt in a small bowl so the spices spread evenly.
- Sprinkle the spice mix over the beef and mix gently with your fingers. Do not over-mix or the patties turn tough.
- Divide into 4 portions (about 150 g each). Shape into patties slightly wider than your buns and press a small dimple in the centre with your thumb.
- Chill the patties in the fridge for 20-30 minutes so they hold their shape.
- Heat a heavy pan or grill on medium-high. Cook the patties for 4-5 minutes, then flip only once a dark crust has formed and cook another 4 minutes. Add a cheese slice in the last minute and cover so it melts.
- Mix the flour, salt and paprika. Toss the onion rings in it until well coated and shake off the extra.
- Fry in hot oil (175°C / 350°F) in small batches for 2-3 minutes until golden and crisp. Drain on paper towels.
- Soak the potato sticks in cold water for 30 minutes, then dry them well.
- Fry at 160°C (320°F) for 5 minutes, take them out, then fry again at 190°C (375°F) for 2-3 minutes until crisp. Salt straight away.
- Spread a good layer of mayonnaise on the toasted bottom bun. It stops the juices from making the bread soggy.
- Add a tomato slice and a handful of shredded cabbage.
- Place the hot patty on the cabbage, then top it with pickles.
- Pile on the crispy onion straws and drizzle the Whiskey River BBQ sauce over them so it drips down the sides.
- Cover with the top bun and serve right away with fries and extra sauce for dipping.

Frequently Asked Questions
What does Whiskey River BBQ sauce taste like?
It is sweet, smoky and tangy, a bit like a thick American BBQ sauce with a deeper, slightly oaky flavour from the reduced whiskey.
Can I make the sauce ahead of time?
Yes. It actually tastes better the next day. Keep it in a clean jar in the fridge for up to 2 weeks.
Why do my burger patties fall apart?
Usually the beef is too lean, over-mixed or flipped too early. Use beef with some fat, mix gently, chill the patties and flip only once.
Can I cook the patties in a pan instead of a grill?
Yes. A heavy cast iron or non-stick pan on medium-high heat gives a great crust. Cook about 4-5 minutes on the first side and 4 minutes on the second.
Can I use chicken instead of beef?
Yes. Use ground chicken with the same spices, add a tablespoon of breadcrumbs to help it bind, and cook until no pink remains inside.
