When I first thought about making this Kali Masoor Daal, I thought it would just be a simple, easy dish! However, as soon as I entered the kitchen, I faced a few challenges.

Difficulty 1: The Consistency Challenge: The biggest difficulty came when the dal was cooked, but the consistency was completely watery. It didn’t look creamy at all, which is how I wanted it to be.

Cover-up: Then, I remembered my Nani’s technique—I picked up a whisk and started gently mashing the dal. This naturally made the texture thick and creamy.

Difficulty 2: Perfecting the Tadka: While making the tadka, I was afraid the garlic would burn, because if it turns dark brown, the taste of the entire dal becomes bitter.

Cover-up: I immediately turned the flame down very low, and as soon as the garlic turned light golden, I quickly added the remaining ingredients to finish the tadka to ensure the perfect aroma.
When I tasted this creamy dal for the first time, I was amazed at how much the taste changed with just a few small tricks! That day I learned that cooking isn’t just about following recipes, but also about using your own understanding and patience.

- Prepare the Lentils
- Place the sabut kali masoor in a bowl, cover with water, and soak for 15 minutes. After soaking, strain and rinse thoroughly.
- The Initial Simmer
- In a heavy-bottomed pot, combine the soaked lentils, fresh water, turmeric, salt, and crushed garlic. Bring to a boil, then reduce the heat to low. Cover partially and simmer for 20–25 minutes, or until the lentils are tender and have softened.
- Enriching the Texture
- Once the lentils are cooked, stir in the milk, red chili powder, and garam masala. Allow the mixture to simmer for an additional 4–5 minutes, stirring occasionally to ensure the milk is fully incorporated and the consistency is creamy.
- The Aromatic Tadka
- In a separate small frying pan, heat the oil over medium heat. Add the chopped onions and sauté until translucent. Stir in the crushed garlic, followed by the cumin seeds and green chillies. Cook for 30 seconds to release the oils, then add the curry leaves, mixing briefly until fragrant.
- Finishing
- Immediately pour the sizzling tadka over the cooked lentils. Stir gently to distribute the tempered spices. Finish with a generous squeeze of fresh lemon juice just before serving to brighten the earthy profile of the lentils.
