  • Water: As required for boiling approx. 3–4 cups
  • Turmeric Powder: 1/2 tsp
  • Salt: 1 tsp or to taste
  • Garlic: 1/2 tbsp crushed
  • Milk: 1/2 cup
  • Red Chili Powder: 1 tsp or to taste
  • Garam Masala Powder: 1/2 tsp
  • For the Tadka Tempering:
  • Cooking Oil: 3–4 tbsp
  • Onion: 1 medium finely chopped
  • Garlic: 1/2 tbsp crushed
  • Cumin Seeds Zeera: 1/2 tbsp
  • Green Chillies: 2 slit or chopped
  • Curry Leaves Kary Pata: 9–10 leaves
  • Lemon Juice: To taste for finishing

Equipment

  • 1 Heavy-Bottomed Pot Essential for an even distribution of heat, preventing the lentils from scorching at the bottom while they simmer.
  • 1 Mixing Bowl Used for soaking the lentils and rinsing them thoroughly before cooking.
  • 1 Strainer or Colander Needed to drain the soaking water effectively.
  • 1 small frying pan Specifically used for preparing the tadka (tempering) to ensure the spices and aromatics bloom properly in the hot oil.
  • 1 Spatula or Cooking Spoon For stirring the lentils and ensuring the milk and spices are fully incorporated.
  • 1 Whisk (Optional) Highly recommended if you wish to partially mash some of the lentils to create a naturally thicker, creamier consistency.

  2. Prepare the Lentils
  3. Place the sabut kali masoor in a bowl, cover with water, and soak for 15 minutes. After soaking, strain and rinse thoroughly.
  4. The Initial Simmer
  5. In a heavy-bottomed pot, combine the soaked lentils, fresh water, turmeric, salt, and crushed garlic. Bring to a boil, then reduce the heat to low. Cover partially and simmer for 20–25 minutes, or until the lentils are tender and have softened.
  6. Enriching the Texture
  7. Once the lentils are cooked, stir in the milk, red chili powder, and garam masala. Allow the mixture to simmer for an additional 4–5 minutes, stirring occasionally to ensure the milk is fully incorporated and the consistency is creamy.
  8. The Aromatic Tadka
  9. In a separate small frying pan, heat the oil over medium heat. Add the chopped onions and sauté until translucent. Stir in the crushed garlic, followed by the cumin seeds and green chillies. Cook for 30 seconds to release the oils, then add the curry leaves, mixing briefly until fragrant.

  11. Immediately pour the sizzling tadka over the cooked lentils. Stir gently to distribute the tempered spices. Finish with a generous squeeze of fresh lemon juice just before serving to brighten the earthy profile of the lentils.

Tip:Professional Tip: For an even creamier consistency, you can use a whisk to gently mash a small portion of the lentils against the side of the pot before adding the milk. This creates a natural thickening effect that binds the spices beautifully.
