To be honest, I have always been a die-hard fan of the “Meat Burger.” To me, a burger meant nothing but a juicy meat patty, and my eyes would never even stop at the “veg” section of a menu. I truly believed that real flavor only existed in meat, and I wondered how a veggie burger could ever even compete.
But you never know when the world of flavors might take a turn!
One day, during lunch break, my friend Naina opened her lunch box. Inside was a beautiful, golden-brown Veg Burger. I could see various vegetables—carrots, peas, and corn—peeking through the patty, which looked incredibly crispy.
Naina offered me a piece and said, “Fozia, you have to try this! I made a really delicious veg burger at home today.”
I pulled back slightly and said with a smile, “Naina, you know me, I only eat meat burgers. Veggie burgers just aren’t my thing.”
But Naina wasn’t about to give up! She insisted, “Come on, just for my sake… just one bite. Taste it once, and then you don’t have to eat any more if you don’t want to.”

- In a large mixing bowl, combine the mashed potatoes with the steamed vegetables. Add the cumin powder, garam masala, turmeric, chili powder, chaat masala, the remaining ¼ tsp salt, and fresh coriander. Sprinkle in ¼ tsp of bread crumbs to help absorb moisture. Mix until well combined and form into uniform circular patties.
- Batter and Bread
- The Slurry: In a small bowl, whisk together the all-purpose flour, cornflour, pepper powder, and salt. Gradually add water until you achieve a smooth, thin consistency.
- The Coating: Place the bread crumbs in a separate shallow bowl. Dip each patty into the flour slurry, ensuring it is fully coated, then roll it in the bread crumbs, pressing gently so the crumbs adhere.
- Fry to Golden Perfection
- Heat oil in a pan over medium-high heat. Fry the patties until they are golden brown and crispy on both sides. Drain on paper towels.
- Prepare the Creamy Burger Sauce
- In a small bowl, combine the eggless mayonnaise, tomato sauce, and chili sauce. Whisk with a spoon until the colors blend into a smooth, rose-colored sauce.
- Assemble the Burger
- Bottom Bun: Spread a generous layer of the signature sauce on the bottom half of the bun.
