The “Lubbock Legend” Burger Recreated
When I decided to recreate the famous Christakis Burgers recipe in my kitchen, I thought it was just a regular burger. But in reality, making this “Lubbock Legend” perfectly was nothing short of a mission!
The first difficulty I faced was with the texture of the pastrami. The pastrami I had was a bit too salty and was overpowering the flavor of the burger.

Coverup Method: I immediately changed my strategy. Instead of crisping the pastrami on direct heat, I steamed it slightly to reduce its extra saltiness, and then pan-seared it in light butter for just 30 seconds. This made it crispy and perfectly balanced the flavor.
The second major hurdle was the burger bun getting soggy. Because of so many toppings and the juicy beef patty, the bun was getting wet quickly, which would have ruined the whole burger experience.

Coverup Method: I found the solution to this by creating a “Toasting Shield.” Instead of spreading butter on the inside of the buns, I applied a very thin and even layer of mayo and then toasted them on the griddle. The mayo created a “moisture barrier,” which kept the bun crispy and kept the burger juices locked inside.
The final difficulty was melting the Swiss cheese evenly without overcooking the patty.

Coverup Method: After placing the cheese on top of the patty, I poured a spoonful of hot water into the pan and immediately closed the lid. That “steam bath” melted the cheese in true restaurant style within 10 seconds, and the burger tasted exactly the way I wanted!
Conclusion: This burger wasn’t just a meal, but a test of my cooking skills. Every challenge taught me that when it comes to burgers, “Layering and Timing” is everything. Now, whenever I make this burger, it’s not just a recipe for me—it’s my “sweet victory!

- Prepare the Pastrami: Warm the sliced pastrami in a skillet or on a griddle. For the best flavor, sear it for 30–60 seconds on each side until the edges become slightly crispy. Set aside.
- Cook the Patties: Season your beef patties with salt and pepper. Grill or pan-sear them to your desired level of doneness.
- Melt the Cheese: Once the patties are nearly cooked, place 1–2 slices of Swiss cheese on each patty. Cover the pan briefly to ensure the cheese melts thoroughly.
- Toast the Buns: Butter the cut sides of the 4 buns and toast them on a skillet until golden brown and crisp.
- Assemble:
- Place a cheeseburger patty on each toasted bottom bun.
- Top each patty with a generous portion of the seared pastrami.
- Add fresh lettuce and tomato slices to each burger.
- Add any desired condiments to the top buns and close the burgers.
