This lemon chicken was born on a day when I had no tomatoes in the kitchen. Guests were coming for dinner, the chicken was already cut, and I didn’t want to make plain white karahi again. I had a bowl of small desi lemons, plenty of green chillies and a piece of ginger, so I decided to let the lemon do the job tomatoes usually do. The result was so fresh and tangy that it is now one of the most requested dishes in my house.
It is cooked like a karahi, in a little oil with garlic, ginger and lots of crushed black pepper, but there is no tomato and no red chilli. The sourness comes only from fresh lemon juice, added at the end so it stays bright. Whole green chillies, ginger juliennes, coriander and a few lemon slices on top make it look as fresh as it tastes.
If you enjoy tomato-free karahis, try my white chicken karahi or the creamy shimla mirch white makhni karahi. For another fragrant chicken dish, see my kari patta chicken.
Why You’ll Love This Lemon Chicken
- Fresh and tangy: lemon gives it a light, zesty flavour that cuts through the richness.
- No tomatoes needed: perfect when tomatoes are expensive or not at home.
- Quick: ready in about 40 minutes in one karahi.
- Peppery heat: black pepper and green chillies give warmth without red colour.
Ingredients You Need
Chicken: bone-in chicken cut into karahi-size pieces gives the best flavour.
Aromatics: oil, garlic paste, ginger paste and sliced green chillies.
Spices: salt, crushed black pepper, white pepper, cumin powder and a little turmeric.
Tang: fresh lemon juice plus a little yogurt for body.
To finish: ginger juliennes, whole green chillies, lemon slices and fresh coriander.
My Tips for the Best Lemon Chicken
- Add lemon juice at the end. Cooking lemon juice for too long makes it bitter.
- Use fresh lemons. Bottled juice tastes flat and sharp.
- Fry the chicken well first. Searing it in garlic and ginger builds flavour since there are no tomatoes.
- Crush the pepper fresh. It is the main spice, so freshly crushed pepper really matters.
- Keep the gravy light. This is a thin, oily karahi gravy, not a thick curry.
- Don’t cook the lemon slices. Add them only as a garnish so the peel doesn’t make the gravy bitter.
What to Serve With Lemon Chicken
Hot naan or tandoori roti is perfect for scooping up the tangy gravy. It is also lovely with plain basmati rice, a simple salad and mint raita.
Storing and Reheating
Keep leftovers in the fridge for up to 2 days. Reheat gently on low heat and add a few drops of fresh lemon juice before serving to bring back the fresh flavour.

Notes
Frequently Asked Questions
Why did my lemon chicken turn bitter?
The lemon juice was cooked for too long or the lemon slices were cooked in the gravy. Add the juice at the very end and use slices only for garnish.
Can I use boneless chicken?
Yes. Reduce the cooking time to about 15 minutes so it doesn’t dry out.
Can I add tomatoes?
You can, but then it becomes a regular karahi. The beauty of this recipe is the clean, tangy lemon flavour.
How spicy is it?
It has a medium, peppery heat. Reduce the black pepper and green chillies for a milder version.
Can I make it ahead?
Yes. Cook it fully but add the lemon juice and garnish just before serving.
