Bake boneless chicken breast at 400°F (200°C) for 20 to 25 minutes, until the thickest part reaches 165°F (74°C) inside. Small breasts need about 15-18 minutes and large ones up to 30 minutes.
In our house, chicken usually goes into a karahi, not the oven, so baking plain chicken breast was new for me. My first few trays were a disaster: one batch came out pink near the centre, so I put it back and ended up with chicken so dry that my son Zayan quietly pushed it to the side of his plate. I kept changing the temperature and the time, and cutting into every piece to check, which only let the juices run out. What finally fixed it was simple: a hot 400°F (200°C) oven, flattening the thick end so the breast cooks evenly, and a cheap instant-read thermometer instead of guessing. Now I bake chicken breast almost every week for wraps, salads and lunchboxes, and it comes out juicy every single time.
How Long to Bake Chicken Breast at 400°F (By Size)
| Chicken breast size | Time at 400°F (200°C) |
|---|---|
| Thin-sliced breast or cutlets (about 1/2 inch) | 12-15 minutes |
| Small breast (4-5 oz / 115-140 g) | 15-18 minutes |
| Medium breast (6-8 oz / 170-225 g) | 20-25 minutes |
| Large breast (10-12 oz / 280-340 g) | 25-30 minutes |
| Bone-in, skin-on split breast | 35-45 minutes |
| Frozen boneless breast | about 50% longer (30-35 minutes) |
These times are for a preheated conventional oven with the tray on the middle rack. For thighs, wings, drumsticks and whole chicken, see my full oven cooking times chart.
Why 400°F Is the Best Temperature for Chicken Breast
- Fast cooking means juicy meat: chicken breast is lean, so the shorter it stays in the oven, the less moisture it loses.
- Golden outside: 400°F is hot enough to brown the spices and give the outside a lovely colour.
- Not too hot: at 425-450°F the outside can dry out before the centre is cooked.
At 350°F (180°C) the same breast takes about 25-30 minutes and browns less. It works, but I prefer 400°F.
How to Know Chicken Breast Is Done
The only sure way is an instant-read thermometer. Push it into the thickest part of the breast: it should read 165°F (74°C). If you take it out at 160°F and rest it under foil, it will rise to 165°F and stay extra juicy. Without a thermometer, cut into the thickest part: the meat should be white all the way through with clear juices, but cutting lets juices escape, so a thermometer really is worth it.

Reads in 1-2 seconds, backlit screen, waterproof, fold-away probe. The easiest way to never serve dry or undercooked chicken.

My Tips for Juicy Baked Chicken Breast
- Flatten the thick end so the whole breast cooks evenly.
- Pat it dry before oiling, so the spices stick and the outside browns.
- Quick brine (optional): 15-30 minutes in salted water makes a big difference.
- Leave space on the tray so the chicken roasts instead of steaming.
- Rest for 5 minutes before slicing.
Ways to Use Baked Chicken Breast
Slice it over a salad, wrap it in a paratha with chutney, add it to fried rice or pasta, or serve it with roasted vegetables. It goes perfectly with my roasted potatoes and carrots and chicken black pepper with egg fried rice. If you love thin cutlets, see my guide to cooking thin-sliced chicken breast.

Ingredients
Equipment
Method
- Preheat the oven to 400°F (200°C) with the rack in the middle. Line a baking tray with foil or parchment.
- Pat the chicken breasts dry with paper towels. If one end is much thicker, cover the breast with cling film and gently flatten the thick end so the whole piece is an even thickness.
- Mix the salt, black pepper, garlic powder, paprika and oregano in a small bowl. (For the desi version, use red chilli powder and garam masala instead of paprika and oregano.)
- Rub the chicken with the oil, then sprinkle the spice mix on both sides. For the desi version, drizzle the lemon juice over the chicken too.
- Place the breasts on the tray with space between them. Bake for 20-25 minutes, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
- Take the chicken out, cover loosely with foil and rest for 5 minutes before slicing so the juices stay inside.
Notes
Frequently Asked Questions
How long do you bake chicken breast at 400°F?
Boneless chicken breasts of 6-8 oz take 20-25 minutes at 400°F (200°C). Check that the thickest part reaches 165°F (74°C).
Do you cover chicken breast when baking at 400°F?
No. Bake it uncovered so the outside browns. Cover it loosely with foil only while it rests.
Is it better to bake chicken at 350 or 400?
400°F is better for boneless breasts because the shorter cooking time keeps them juicier. 350°F works too, but takes longer and browns less.
How long to bake frozen chicken breast at 400°F?
About 50% longer than fresh, usually 30-35 minutes for medium breasts. Always check for 165°F inside. See my frozen foods cooking guide for more.
Why is my baked chicken breast dry?
It was cooked too long or at too low a temperature. Use 400°F, flatten thick breasts, and take them out as soon as they reach 165°F inside.
