I clean up the salmon. The reason is that whenever I bring the salmon home from the store, I always assume that it became dusty during delivery. In order to allay my fears that someone may have handled the salmon without wearing gloves when cutting or capturing it, I sprinkle the salmon with a teaspoon’s worth of salt. After a while, I wash the salmon in the water to remove what I believe to be all the dust before adding lemon juice to either cook it or freeze it. According to my grandmother, washing the fish with salt removes the stench from the inside and makes it salty. Adding lemon juice improves the flavor and also makes the smell of the fish go away.
