Cooking Sindhi Palak ( Spinach ) by Chef Fozia

I am not a Sindhi but I like Sindhi spinach very much. It is called Sindhi spinach because once upon a time it was eaten fondly by the Sindhi people. I also like it very much because of its unique taste, I will definitely share its recipe with you here. It tastes very delicious when eaten with parathas. It will be cooked in every house that likes vegetables in food.

Ingredients

Spinach ========  1 bundle fresh ( cut in small pieces )

Turmeric========== 1tsp

Oil =====2 tbsp

Onion Chopped======1 tbsp

Tomato Puree ====== 2 tbsp

Ground Flour ======  3 tbsp ( Mix well with 1/2 cup of  fresh water )

Hing ====== Pinch

Whole Green Chili  ======   4

Salt  ==== To taste

Red Chili Powder =====  1 /2 tsp

Desi Ghee ==== 1 tbsp

Method

First put oil in a pan. Then put hing, onion and green chilies. Fry until onion turn soft then add spinach. Turn around until soft and all spinach water reduced. Then add salt, red chili powder, turmeric and tomato puree. Cook until oil visible in pan. Then pour ground flour mixture in pan and cook until all water evaporated and spinach look thick in consistancy. At last pour desi ghee on top for tempting flavor.
