The Tale of Two “Ben Burgers”: A Culinary Crossover

Some stories begin in the kitchen but end up connecting two different corners of the world. That is exactly what happened to me. I have always been a fan of food fusion and local “chatkhara” flavors, but when I visited Melbourne, Australia, for the first time, I discovered something truly surprising.

In Springvale, parked near a petrol station, stood a food truck named “Ben Burger.” I thought to myself, “Let’s try a typical burger.” But when I went to order, the Malaysian uncle standing there said, “Beta (daughter), if you want the real flavor, try our Nasi Lemak.”

What? A Food Truck Named “Burger” but Famous for “Rice”?

It was a total shock! A burger truck serving street-style Nasi Lemak—fragrant rice cooked in coconut milk—served with a tangy sambal sauce. That Nasi Lemak was so zesty and full of flavor that it instantly reminded me of the local dhabas in Karachi. In the chilly Melbourne weather, that hot rice and spicy sauce were pure bliss.

The Real “Ben” in Pakistan: The Aroma of Bun Kabab

When I returned to Pakistan, the first thing I did was head to Karachi’s Burns Road to have a Bun Kabab (which many people here affectionately call a “Ben” burger).

This is our “original” Ben Burger. It features that classic street-style, tawa-toasted bun, a thick layer of frothy egg, and a savory shami kabab. When you add that sharp, spicy green chutney “fuse”—uff! The aroma of Bun Kabab in those narrow streets, the sweetness of the onions, and that unmistakable taste… it truly surpasses even the fancy food trucks of Melbourne.

  • Prepare Hari Chutney:
  • -Podina Mint leaves ½ Cup
  • -Hara dhania Fresh coriander 1 Cup
  • -Hari mirch Green chillies 3-4
  • -Lehsan Garlic cloves 3-4
  • -Zeera Cumin seeds 2 tsp
  • -Namak Salt ½ tsp or to taste
  • -Tatri Citric acid ¼ tsp
  • -Lemon juice 1 tbs
  • -Dahi Yogurt 1 Cup
  • Prepare Daal Kabab:
  • -Chana daal Split bengal gram 300g (soaked for 2 hours)
  • -Water 1 Cup or as required
  • -Sabut lal mirch Button red chillies 7-8
  • -Badi elaichi Black cardamom 2
  • -Darchini Cinnamon stick 1
  • -Namak Salt 1 tsp or to taste
  • -Zeera Cumin seeds 1 tbs
  • -Garam masala powder 1 tsp
  • -Laung powder Clove powder ¼ tsp
  • -Lehsan Garlic cloves 3-4
  • -Hari mirch Green chillies 3-4
  • -Podina Mint leaves 1-2 tbs
  • -Hara dhania Fresh coriander 1-2 tbs
  • -Chawal ka atta Rice flour 3 tbs
  • -Anday Eggs 3-4
  • -Namak Salt ½ tsp or to taste
  • -Ghee Clarified butter 1 tsp
  • -Ghee Clarified butter 1 tsp
  • -Burger buns as required
  • -Tomato ketchup
  • -Coleslaw
  • -Kheera Cucumber slices
  • -Pyaz Onion rings
  • -Chaat masala
  • -Tamatar Tomato slice
  • -Ghee Clarified butter 1 tsp

Equipment

  • 1 Pressure Cooker or Deep Saucepan To boil the chana daal
  • 1 Food Processor or Sil-Batta (Stone Mortar) To grind
  • 1 large mixing bowl For whisking the 3-4 eggs
  • 1 Flat Tawa (Griddle) or Large Non-Stick Skillet Shallow fry the patties & toast the bun
  • 1 Blender/Grinder Specifically for the Hari Chutney

Method

  2. Prepare Hari Chutney:
  3. -In a blender jug,add mint leaves,fresh coriander,green chillies,garlic,cumin seeds,salt,citric acid, lemon juice,yogurt,blend well & set aside.
  4. Prepare Daal Kabab:
  5. -In a saucepan,add split bengal gram,water,button red chillies,black cardamom,cinnamon stick,salt, cumin seeds,garam masala powder,clove powder,garlic,mix well & bring it to boil,cover & cook on low flame until tender (25-30 minutes).
  6. -Discard black cardamom & cinnamon stick.
  7. -Let it cool completely.
  8. -In a chopper,add boiled lentil mixture,green chillies,mint leaves,fresh coriander,rice flour & chop well.
  9. -With the help of wet hands,take a small quantity of mixture (40g) & make kababs of equal sizes (makes 18-20).
  10. -Can be stored in an airtight container for up to 2 weeks in freezer.
  11. -In a bowl,add eggs,salt & whisk well until foamy.
  12. -Heat griddle,add clarified butter & let it melt.
  13. -Add whisked eggs,place daal kabab & covered with whisked egg & cook on medium flame from both sides until golden.
  14. -On same griddle,add clarified butter & let it melt,cut bun from the middle & toast bun from both sides.
  15. -On one side of bun,add & spread prepared hari chutney & on another bun,add & spread tomato ketchup.
  16. -On green chutney,add coleslaw,cucumber slices,daal kabab,onion rings,chaat masala,tomato slice & cover with top bun to make a bun kabab.
  17. -Add clarified butter & toast bun kabab from both sides.
  18. -Cut in half & serve with prepared green chutney & tomato ketchup!

Pro Tip:The "Bun-Steam" Finish: After assembling the burger (patty, chutney, veggies), place the whole burger back on the tawa for 30 seconds. Cover it with a large steel lid for a moment. The steam from the chutney and veggies will soften the bun slightly while keeping the bottom crispy—this is exactly how the famous "Bun Kabab" vendors in Karachi get that perfect texture.
