The first time I tasted Tuscan chicken was at my cousin’s house, and I kept going back to the pan with a piece of bread to wipe up the sauce. When I tried it at home, I made a few changes for my family: a pinch of crushed red chilli for desi taste, red bell pepper because sun-dried tomatoes are not always easy to find here, and plenty of fresh spinach. Now it is my go-to dish when I want something that feels like a restaurant dinner but takes only one pan.
The chicken is seared until golden, then simmered in a garlic, cream and cheese sauce with spinach and red pepper until the sauce turns silky and coats every piece. It is rich, comforting and full of flavour, and it works just as well with naan as it does with pasta or rice.

Why You’ll Love This Tuscan Chicken
- One pan: sear, simmer and serve from the same pan.
- Restaurant taste at home: rich garlic cream sauce with cheese and herbs.
- Hidden greens: a whole bunch of spinach melts into the sauce.
- Flexible: serve with pasta, rice, mashed potatoes or naan.
Ingredients You Need
Chicken: boneless chicken thighs or breasts, flattened to an even thickness.
For searing: oil, butter, salt, black pepper, garlic powder and dried oregano or mixed herbs.
Cream sauce: garlic, cooking cream, milk or chicken stock, and grated cheese (parmesan or cheddar).
Vegetables: fresh spinach and red bell pepper strips (or sun-dried tomatoes if you have them).
Desi touch: a pinch of crushed red chilli.
My Tips for the Best Tuscan Chicken
- Flatten the chicken. Even thickness means it cooks evenly and stays juicy.
- Don’t move the chicken while searing. Let it form a golden crust for 4 to 5 minutes per side.
- Use the pan juices. The brown bits left after searing give the sauce its flavour.
- Keep the heat low after adding cream. High heat can make the sauce split.
- Add spinach at the end. It wilts in a minute and stays bright green.
- Adjust the thickness. Add a splash of milk if the sauce gets too thick.
What to Serve With Tuscan Chicken
Penne or spaghetti, buttered rice, mashed potatoes or warm garlic naan all work beautifully. Add a simple green salad on the side to balance the rich sauce.
Storing and Reheating
Keep leftovers in the fridge for up to 2 days. Reheat gently on low heat with a splash of milk, stirring, until hot. Avoid boiling the sauce.
