Roast Tomato Soup Recipe

Here’s a recipe for a delicious roast tomato soup:

Ingredients:

  • 2 pounds of ripe tomatoes
  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 4 cups of vegetable or chicken broth
  • 1/4 cup of heavy cream (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them cut-side up on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  4. Roast the tomatoes in the oven for 30-40 minutes, or until they are soft and slightly charred.
  5. While the tomatoes are roasting, heat the remaining tablespoon of olive oil in a large pot over medium heat.
  6. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is translucent.
  7. Add the dried basil, oregano, and paprika and sauté for another minute.
  8. Add the roasted tomatoes and any juices from the baking sheet to the pot.
  9. Add the vegetable or chicken broth and bring the mixture to a simmer.
  10. Let the soup simmer for 10-15 minutes, or until the flavors have melded together.
  11. Use an immersion blender to puree the soup until smooth.
  12. Stir in the heavy cream, if using, and season with salt and pepper to taste.
  13. Serve hot with a drizzle of olive oil and a sprinkle of fresh herbs, if desired.
