Tawa Bhindi Recipe (Simple Okra Fry with Garlic and Green Chillies)

Some days there is just no time. Everyone is hungry, the day is busy, and all I want is a meal that cooks quickly without standing at the stove for long. Bhindi is one of those vegetables that takes real effort before cooking even starts: washing, drying and cutting every single piece. By the time the chopping board is full of little green rounds, my heart just wants it cooked and on the table as fast as possible.

On those days, I make this tawa bhindi. No onion, no tomato and no long list of masalas, just bhindi, a few slices of garlic, green chillies, oil and salt. It cooks on an open tawa until it turns crispy, and the simple taste of salt and hari mirch with the lovely aroma of garlic makes it something special. The photo above is my everyday plate, a heap of tawa bhindi with two hot chapatis, and it never lasts long.

How I Keep Bhindi from Turning Slimy

Slimy bhindi is everyone’s biggest complaint, but it is easy to avoid:

  • Dry it completely. Wash the okra, then wipe each piece with a towel and let it air dry. Water is the main cause of slime.
  • Cut it on a dry board with a dry knife, into thin rounds.
  • Never cover the pan. Steam makes okra sticky; an open tawa lets the moisture escape.
  • Add salt at the very end. Salt pulls out moisture, so it goes in after the bhindi is crisp.
  • Be patient. In the first few minutes the bhindi will look sticky. Keep cooking on medium heat and the stickiness disappears.

What to Serve with Tawa Bhindi

I love it with soft chapati, just like in the photo, or with a paratha and a bowl of yogurt. It also goes well with a simple daal and rice, like in my daal chawal thali. If your family loves bhindi, also try my bhindi chicken, and for another light vegetable side, my baingan bharta with dahi.

Tawa Bhindi (Dry Okra Fry with Garlic and Green Chillies)

Simple homestyle tawa bhindi made with just five ingredients: okra rounds slow-fried on a tawa with sliced garlic and green chillies until crisp at the edges and not slimy at all. Perfect with hot roti.

Ingredients
  

  • 500 g bhindi (okra) tender, washed and completely dried
  • 3 tbsp cooking oil
  • 5 to 6 garlic cloves thinly sliced
  • 3 to 4 green chillies chopped
  • 3/4 tsp salt or to taste

  • Tawa or wide flat frying pan

Method
 

  1. Wash the bhindi and dry every piece completely with a kitchen towel. Let it air dry for 20 to 30 minutes if you have time. Any water left on the okra makes it slimy.
  2. Trim off the tops and tails and cut the bhindi into thin rounds, about 1/4 inch (6 mm) thick.
  3. Heat the oil on a tawa or wide flat pan on medium heat. Add the sliced garlic and fry for about 1 minute, until it turns light golden and fragrant.
  4. Add the bhindi and spread it out in a thin layer. Do not cover the pan.
  5. Cook on medium to medium-high heat for 12 to 15 minutes, stirring gently every 2 to 3 minutes, until the stickiness is gone and the edges turn crisp and slightly charred.
  6. Add the green chillies and cook for 2 to 3 minutes more.
  7. Sprinkle the salt at the very end, toss once and turn off the heat. Serve hot with roti or paratha.

Notes

  • Dry, dry, dry: the okra must be completely dry before cutting, and the knife and board should be dry too.
  • Salt at the end: adding salt early draws out moisture and makes bhindi sticky.
  • No lid: covering the pan traps steam and turns it slimy.
  • Do not crowd: if your tawa is small, cook in two batches so the okra fries instead of steaming.

Frequently Asked Questions

Why does my bhindi become sticky?

Usually the okra was wet when cut, the pan was covered, or salt was added too early. Dry the bhindi completely, cook it uncovered and salt it at the end.

Can I make tawa bhindi with frozen okra?

Yes, but do not thaw it. Cook it straight from frozen on a hot tawa, uncovered, so the extra water evaporates quickly. It may take a few minutes longer.

Can I add onion or spices?

Of course. Fried onions, a pinch of turmeric, red chilli powder or amchur all work well. This recipe keeps it simple, with only garlic and green chillies.

How do I store leftovers?

Keep it in the fridge for up to 2 days and reheat it on a hot tawa, not in the microwave, so it stays dry.
