Ingredients
  

  • For the Juicy Beef Seekh Kababs
  • 800 g Ground beef minced very fine, ideally 20% fat content for softness
  • 1 medium Onion finely grated, with all water squeezed out completely using a cloth
  • 1 tbsp Ginger-garlic paste
  • 2-3 Green chilies finely minced
  • ¼ cup Fresh coriander leaves finely chopped
  • 1 tsp Garam masala powder
  • 1 tsp Coriander powder roasted and coarsely crushed
  • 1 tsp Cumin powder roasted and ground
  • ½ tsp Red chili flakes or red chili powder
  • 1 tsp Chat masala adds a traditional tangy kick
  • 1 tbsp Melted butter or ghee for extra moisture inside the meat
  • 1 tsp Salt or to taste
  • For Assembly & Toppings
  • 4 Soft flatbreads such as thin rotis, parathas, or flour tortillas
  • 1 large Red onion thinly sliced into rings
  • 1 cup Fresh greens arugula, lettuce, or cabbage shredded
  • ½ cup Fresh coriander and mint leaves
  • 1 Fresh lemon cut into wedges
  • Optional Sauce: Mint-yogurt chutney or garlic sauce

Equipment

  • 1 Grill Pan, Cast-Iron Skillet, or Air Fryer
  • 1 large mixing bowl
  • 1 Skewers (Metal or Wooden)

Method
 

  1. The Secrets to Perfect Marination
  2. Crucial Step: Ensure the minced beef has no excess water. Put your grated onion into a cheesecloth or napkin and squeeze out every single drop of juice before adding it to the meat. This prevents the kababs from breaking on the skewers.
  3. In a large bowl, mix the minced beef with the squeezed onion, ginger-garlic paste, green chilies, and fresh coriander.
  4. Add the garam masala, crushed coriander, cumin, chili flakes, chat masala, salt, and melted butter.
  5. Mix the meat thoroughly with your hands for 4–5 minutes, almost like kneading dough, until the meat becomes sticky and cohesive. Cover and refrigerate for 30 minutes.
  6. Shaping the Kababs
  7. Divide the meat into 4 large, equal portions.
  8. Wet your hands with a little cold water. Take a portion of meat and press it firmly onto a skewer, smoothing it down into a long, uniform cylindrical kabab shape (about 6 inches long).
  9. Cooking to Juicy Perfection
  10. Heat your grill pan or skillet over medium-high heat and lightly brush it with oil.
  11. Place the skewers on the hot pan. Cook for 3 to 4 minutes per side, turning gently, until all sides are beautifully browned and slightly charred (about 12–15 minutes total). Do not overcook, or the beef will lose its juices.
  12. Gently slide the kababs off the skewers and let them rest for 2 minutes.
  13. Assembling the Wraps
  14. Warm your flatbreads on a tawa or pan for a few seconds until soft and pliable.
  15. Place a bed of fresh greens and plenty of sliced red onion rings down the center of each flatbread.
  16. Lay a hot, juicy beef seekh kabab right on top of the onions.
  17. Garnish with fresh coriander leaves, sprinkle a pinch of extra chat masala, and squeeze fresh lemon juice over the meat.
  18. Roll the flatbread tightly around the filling, wrap the bottom half in parchment paper or foil, and serve immediately!
