When the sun goes down early in winter and the air turns cold, my family starts asking the same question around five o’clock: “Ammi, kuch garam garam?” My answer, more often than not, is this plate. A big pile of golden homemade fries and a few boiled eggs, sprinkled with salt and masala, with hot chai on the side. It is simple, warm and gone within minutes.
I like this combination because it feels like a treat but is still filling and wholesome. The eggs add protein, the fries make it fun, and both are easy to make at the same time: eggs boil on one burner while the fries crisp up on the other.

Why You’ll Love This Snack Plate
- Crispy fries without a fryer: the double-fry method gives great crunch in a simple pan.
- Protein boost: boiled eggs make it filling enough to hold everyone until dinner.
- Budget friendly: just potatoes, eggs and pantry spices.
- Kid approved: fries and eggs are a combination children always love.
Ingredients You Need
Potatoes: large, firm potatoes cut into even sticks.
Eggs: boiled for 9 to 10 minutes for firm yolks.
For frying: oil for deep or shallow frying.
Masala sprinkle: salt, red chilli powder, chaat masala and a little black pepper.
My Tips for Crispy Homemade Fries
- Soak the cut potatoes in cold water for at least 20 minutes. This removes extra starch and helps them crisp.
- Dry them completely. Pat the sticks dry with a clean towel before frying. Wet potatoes make oil splutter and fries soggy.
- Fry twice. First fry on medium heat until soft and pale, rest for 10 minutes, then fry again on high heat until golden and crisp.
- Salt right away. Sprinkle the masala as soon as the fries come out of the oil so it sticks.
- Peel eggs under cold water. Cooling the eggs in cold water makes the shells come off easily.
Serving Ideas
Arrange the fries on a plate with the boiled eggs on the side, halved or whole. Sprinkle a little masala on the eggs too. Serve with ketchup, green chutney or a garlic mayo dip, and a hot cup of chai.

Notes
Frequently Asked Questions
Why are my homemade fries soggy?
Usually because the potatoes were wet, the oil wasn’t hot enough, or the pan was overcrowded. Dry them well, fry in batches, and use the double-fry method.
Can I make these fries in an air fryer?
Yes. Toss the soaked and dried potato sticks with 1 tablespoon of oil and air fry at 200°C for 18 to 20 minutes, shaking halfway.
How long should I boil the eggs?
9 to 10 minutes for fully firm yolks, or 7 minutes for slightly jammy yolks.
Which potatoes are best for fries?
Large, starchy, firm potatoes work best. Avoid very new or waxy potatoes.
Can I prepare the fries ahead?
You can do the first fry ahead, cool the fries and keep them in the fridge for a few hours. Do the second fry just before serving.
