Purslane, Grandma’s Love, and the Ultimate Burger!
Since childhood, I have always had a deep love for purslane (kulfa). While most people rave about typical everyday vegetables, my heart was always set on this unique, tangy green. Whenever it was cooked at home, I would enjoy it with piping hot, fresh roti—my stomach would be full, but my cravings never were!
My lovely grandma has a beautiful field where purslane grows abundantly and naturally. She knows exactly how crazy her granddaughter is about this green. So, what happened next? One early morning, Grandma picked a massive bunch of fresh purslane straight from her field and sent it over to my house. Seeing her love packaged in those fresh greens made my happiness know no bounds!
With so much fresh purslane in front of me, I couldn’t just cook it the same old way. I headed straight to the kitchen and started experimenting:

On the first day, I cooked it with minced meat (qeema), and the combination was absolutely stellar.

On the second day, I made it with lentils (daal) and a fresh tempering, which gave it an incredible, comforting desi flavor.

Then, I added it to a rich meat curry (gosht), and it completely transformed the gravy into something magical.
Every single dish turned out so delicious that everyone in the family was left licking their fingers!
The supply was running low, but suddenly, a unique idea popped into my head. I thought, “If it tastes this amazing with everything else, why not make a burger out of it?”
I immediately took some double-minced beef, mixed it with the boiled purslane leaves, green chilies, ginger, garlic, and garam masala to craft a perfect patty. When I shallow-fried that patty and assembled it between burger buns with fresh tomato slices and onions… honestly, from the very first bite, only one word came out of my mouth: “Incredible!”
That burger wasn’t just stunning to look at and amazing to eat; it was also packed with pure health and nutrition. Grandma’s fresh harvest paired with my new recipe truly turned out to be a super-hit story!

From Grandma’s Field to My Kitchen: How I Made the Ultimate Purslane Beef Burger

- Preparation of Purslane & Aromatics
- Bring water to a boil in your stockpot. Add the purslane leaves and blanch for 2–3 minutes.
- Drain immediately using a colander and shock in cold water to stop the cooking process.
- Squeeze out as much excess moisture from the leaves as possible (this prevents the patties from breaking apart). Finely chop and set aside.
- Crafting the Patties
- In a large mixing bowl, combine the double-minced ground beef, prepared purslane leaves, minced green chilies, grated ginger, and minced garlic.
- Season with the cracked black pepper, garam masala, and salt.
- Add the egg and 1 tablespoon of oil. Mix thoroughly with your hands until the mixture is uniform and holds together well.
- Divide the mixture and shape into flat, wide patties. Ensure the patties are slightly larger than your burger buns, as they will shrink slightly during cooking.
- Searing the Patties
- Heat a thin layer of oil in your skillet over medium-high heat.
- Working in batches, place the patties in the hot pan. Shallow fry for about 4–5 minutes on each side, or until a deeply browned crust forms and the beef is thoroughly cooked through. Remove and let them rest for a minute.
- Optional: Use the residual fat in the skillet to quickly toast the cut sides of your burger buns until golden.
- Assembling the Burger
- Place the bottom half of a toasted bun on your serving plate.
- Lay down the first hot purslane beef patty.
- Layer with fresh tomato slices and onion rings.
- Place the second purslane beef patty directly on top for an indulgent double-decker style.
- Crown with the top half of the bun and serve immediately.
