The Magic of My Kitchen: A Memorable Evening in Sukkur

As the evenings in Sukkur begin to fade into twilight, I feel a desire to cook something new and special in my kitchen. For me, the kitchen isn’t just a place to cook; it is the space where I spread my love and the colors of my creativity for my family.

This Sunday evening was just like that. My grandmother was sitting comfortably in her room, busy with her beads (tasbeeh), and there was a peaceful silence throughout the house. I was standing by the kitchen window, looking at the setting sun, when suddenly, thoughts of those famous bazaars in Bahawalpur and Sukkur came to my mind—places where we often go to wander. I began to recall the vibrancy of the food street, the spicy aroma of the spices, and the “clinking” sound of kebabs frying on the flat iron tawa.

I smiled and thought to myself, “Why not recreate that traditional and irresistible food street flavor with my own hands in my kitchen today?”

I immediately opened the freezer and took out my homemade beef Shami kebabs. I had prepared these kebabs with great care, using the perfect balance of meat, lentils, and special spices. I added ghee to the tawa, and as soon as I dipped the kebab in egg and placed it on the hot surface, such an appetizing aroma filled the entire house that even I was amazed.

The fragrance was so wonderful and traditional that my grandmother came towards the kitchen. She smiled and asked, “Fozia, my daughter! Why is there such a wonderful and delicious aroma of desi ghee coming from the kitchen today?”

I looked at her, smiled affectionately, and said, “Nani Jan! Today, I am making a huge surprise for all of you. A street-style burger just like the bazaar, but perfectly hygienic and made with my love.”

I took long bakery-style buns and toasted them lightly on the tawa. Then, I prepared a special spicy sauce by mixing mayonnaise, chili sauce, and chaat masala, and spread it over the buns. I spread the hot, crispy Shami kebab evenly along the length of the long bun with the back of a spoon. I topped it with finely shredded cabbage and a fluffy, desi-style omelet.

I always believe that food should not only be delicious but also look beautiful. That is why I took a shining white platter, arranged these long burgers, added golden crispy fries, and placed a lovely tomato rose on top of a lettuce leaf. When the platter started looking just like it came from a restaurant, I took a perfect photo for my blog.

When I brought the platter to the table, everyone’s eyes lit up with joy.

With the very first bite, the true happiness and satisfaction I saw on the faces of my husband and children wiped away the exhaustion of my entire day in a second. The aroma of desi ghee, the zing of the kebab, and the crunch of the cabbage—everything was absolutely perfect.

My grandmother lovingly placed her hand on my head and, while showering me with prayers, said, “Fozia, honestly, even the biggest burgers from the market are nothing compared to the taste of your hands. You have refreshed the memories of the delicious kebabs of the old days.”

I picked up my cup of tea, sat in my chair, and began watching my family and my grandmother eat and enjoy themselves in peace. I thought to myself that when your hard work is appreciated like this, and you receive such sincere words of praise from your loved ones and prayers from your elders, the happiness it brings to the heart is irreplaceable.

  • 2 large Pre-made Beef Shami Kababs lentil and shredded beef patties
  • 1 large Egg beaten (for dipping the kababs)
  • 2-3 tbsp Ghee or oil for pan-frying
  • For the Special Street Burger Sauce
  • ¼ cup Mayonnaise
  • 2 tbsp Garlic chili sauce or classic tomato ketchup
  • ¼ tsp Chaat masala for that authentic street tang
  • For the Egg Layer
  • 2 large Eggs
  • A pinch of Salt and freshly cracked black pepper
  • ¼ tsp Red chili flakes
  • The Buns & Fresh Fillings
  • 2 large Long bakery-style burger buns sub rolls or hot dog buns work perfectly
  • 1 cup Cabbage very thinly shredded
  • 4-6 leaves Fresh green leaf lettuce washed and dried
  • 1 Tomato sliced or carved into a rose garnish

  3. Whip the Sauce: In a small bowl, whisk together the mayonnaise, garlic chili sauce (or ketchup), and chaat masala until smooth. Set aside.
  4. Prep the Veggies: Ensure the cabbage is shredded paper-thin—this is the secret to getting that signature street-style crunch and texture.
  5. Phase 2: Frying the Beef Shami & Eggs
  6. Fry the Shami: Heat 2 tablespoons of ghee or oil in a heavy-bottomed frying pan or tawa over medium heat. Dip each beef Shami kabab into the beaten egg, coating it completely. Place on the pan and fry for 2–3 minutes per side until the exterior forms a deep golden, crispy egg-crust. Remove and set aside.
  7. The Street-Style Omelet: Whisk the remaining eggs with salt, black pepper, and chili flakes. Pour into the same pan, swirling it out thin. Cook until set, then fold the omelet into long ribbons or squares that perfectly match the length of your long buns.

  9. Toast: Slice the long burger buns horizontally. Add a tiny splash of ghee to the pan and place the buns cut-side down. Toast until they turn beautifully golden brown and absorb the rich flavors left behind in the pan.

  11. The Spread: Lay the toasted bottom buns on your serving plate. Spread a generous layer of the special street burger sauce on both the top and bottom pieces.
  12. The Meat Layer: Place a crispy beef Shami kabab on the bottom bun. Using the back of a spoon, gently press and spread the soft kabab evenly along the entire length of the long bun.
  13. The Omelet & Crunch: Layer the folded street-style omelet on top of the spread meat. Pile a generous handful of finely shredded cabbage directly over the egg.
  14. Crown: Top with the upper bun and press down gently to seal the layers together.

  16. Serve hot on a white platter accompanied by a generous side of spiced, seasoned French fries, fresh green lettuce leaves, and a bottle of classic tomato ketchup.
