Sabudana Khichdi Recipe with Makhana, Peanuts and Vegetables

For a long time, sabudana in my kitchen meant only one thing: kheer. Then one evening I was craving something light but filling, something that was not the usual heavy dinner. I had a packet of sabudana sitting in the pantry, a jar of makhana I keep for snacking, and some peanuts. I thought, why not try it the savoury way?

I soaked the sabudana in the morning, and in the evening I tossed it with crunchy roasted peanuts, crispy makhana and whatever vegetables I had: a potato, a carrot and half a capsicum. The first bite surprised me. Soft, chewy pearls, crunchy peanuts, a little tang from lemon and a gentle heat from green chillies. Now this sabudana khichdi has become my go-to when I want something quick, light and comforting.

Why You Will Love This Sabudana Khichdi

  • Light but filling: perfect for breakfast or a light evening meal.
  • Full of texture: chewy pearls, crunchy peanuts and crispy makhana in every spoon.
  • Quick to cook: once the sabudana is soaked, it is ready in about 25 minutes.
  • Easy to customize: add any vegetables you have at home.

Ingredients You Need

  • Sabudana: Medium-size pearls work best. They soak evenly and stay separate.
  • Peanuts: Roasted until crunchy. Some are crushed and mixed into the sabudana so the pearls do not stick.
  • Makhana: Roasted in a little oil for extra crunch.
  • Vegetables: Potato, carrot and capsicum add colour and bite.
  • Tempering: Mustard seeds, cumin, green chillies and curry leaves.
  • Lemon and coriander: For freshness at the end.

Tips for Non-Sticky Sabudana Khichdi

  • Rinse well: Wash the sabudana until the water runs clearer to remove extra starch.
  • Soak with just enough water: The water should only cover the pearls. Too much water makes them mushy.
  • Check before cooking: A soaked pearl should mash easily between your fingers.
  • Cook on low heat: High heat makes sabudana sticky and lumpy.
  • Add makhana last: So it stays crunchy instead of turning soft.

        Frequently Asked Questions

Why is my sabudana khichdi sticky?

Usually because of too much soaking water, not rinsing enough, or cooking on high heat. Soak with just enough water to cover, drain well and cook on low heat.

How long should I soak sabudana?

Medium sabudana needs 5-6 hours or overnight. Small pearls may soften in 2-3 hours. Always do the finger-press test.

Can I make it without makhana?

Yes. Makhana adds crunch, but the khichdi tastes great with just peanuts too.

        Can I add other vegetables?

Yes. Peas, sweet corn, tomatoes or spring onions all work well.

        Can I reheat sabudana khichdi?

It is best fresh because sabudana firms up as it cools. To reheat, sprinkle a little water and warm on low heat with the lid on.
