  • Finishing & Extras: 1 Tbsp dried fenugreek leaves kasuri methi, ¼ tsp food color, 1 tsp mustard oil, 1 Tbsp butter, 2 tsp lemon juice, ½ cup water

  • 1 Kitchen Brush Used for basting the skewers with butter during the final sear to achieve that professional glaze.
  • 1 Tongs For safely turning the skewers while searing or grilling.
  • 1 Measuring Spoons/Cups To ensure the spice ratios remain consistent with your signature recipe.

Marinate the Mutton: In a large mixing bowl, combine the yogurt, ginger-garlic paste, green chili paste, and all dry spices (tikka masala, cumin, garam masala, coriander, turmeric, Kashmiri red chili powder, salt, and food color). Add the mutton pieces and mix thoroughly to ensure each piece is well-coated. Allow to marinate for at least 30 minutes (or longer for deeper flavor).
  3. Sauté the Base: Heat the 2 Tbsp of cooking oil in a heavy-bottomed pot or skillet over medium heat. Add the sliced onions and sauté until they turn soft and lightly golden.
  4. Cook the Mutton: Add the marinated mutton to the pot. Stir well to sear the meat. Pour in ½ cup of water, cover, and cook on low-medium heat until the mutton is tender and the water has evaporated.
  5. Add the Smoky Finish: Once the mutton is cooked and the oil begins to separate, stir in the dried fenugreek leaves, mustard oil, and lemon juice.
  6. Assemble and Sear: Carefully thread the cooked mutton pieces onto skewers. For an authentic "tikka" finish, briefly grill or sear the skewers in a pan with 1 Tbsp of butter until they achieve a slight charred exterior.
  7. Garnish and Serve: Sprinkle the chaat masala over the skewers just before serving for an extra tangy kick.

Notes

Pro Tip:Texture: If you find the mutton isn't tender enough, ensure the yogurt is fresh; the enzymes in yogurt act as a natural tenderizer for the meat.
