Ingredients
  

  • 1/2 cup cornmeal
  • 2 cups water
  • 1 1/2 cups milk divided
  • 2-3 tbsp brown sugar or condensed milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 pinch salt
  • 1 small cinnamon stick optional, for boiling
  • 1 pinch nutmeg optional

  2. Prepare the Cornmeal Mixture: In a small bowl, whisk the cornmeal with 1/2 cup of the cold milk until there are no lumps. Set this aside.
  3. Boil the Liquid: In a medium saucepan, bring the 2 cups of water (and the cinnamon stick, if using) to a gentle boil.
  4. Combine: Slowly pour the cornmeal mixture into the boiling water, whisking constantly to prevent any lumps from forming.
  5. Simmer: Reduce the heat to low. Cover the pan and let it simmer for about 10–12 minutes, stirring occasionally to ensure the bottom doesn't scorch. The mixture will begin to thicken.
  6. Finish: Stir in the remaining 1 cup of milk, sweetener, vanilla extract, ground cinnamon, and salt. Continue to cook for another 5 minutes, stirring until you reach your desired creamy consistency.
  7. Serve: Remove from heat and serve warm in a bowl. You can garnish it with fresh fruit, such as sliced bananas or berries, for added texture and nutrition.

Notes

No lumps: always mix the cornmeal with cold milk first and pour it into the boiling water slowly while whisking.
No scorching: keep the heat low and stir from the bottom every couple of minutes.
Consistency: the porridge thickens as it cools. Loosen it with a splash of warm milk before serving.
