Ingredients

  • Ingredients
  • Fresh Ripe Plums Black or Red: 1 kg (washed, pitted, and quartered)
  • Filtered Water: 3 cups 750 ml
  • Fine Granulated Sugar: 1/3 to 1/2 cup adjust based on the natural sweetness of the plums
  • Fresh Lemon Juice: 1 tbsp acts as a flavor enhancer and prevents oxidation
  • Black Salt Kala Namak or Sea Salt: A tiny pinch (optional, for a professional gourmet twist)
  • Fresh Mint Leaves & Lemon Slices: For styling and garnish

Equipment

  • 1 Heavy-Bottomed Stainless Steel Pot
  • 1 High-Speed Blender
  • 1 Fine Mesh Strainer / Chinois
  • 1 Glass Pitcher

Method

  1. Step-by-Step Instructions
  2. Flavor & Color Extraction (The Simmer)
  3. Place the quartered plums, sugar, and filtered water into your stainless steel pot over medium heat.
  4. Bring the mixture to a gentle boil, then lower the heat to a simmer.
  5. Cover and let it simmer for 8 to 10 minutes until the plums are completely softened and the water turns a vibrant, deep crimson hue from the skins.
  6. Blending & Refining
  7. Remove the pot from the heat and allow the mixture to cool down to a safe handling temperature.
  8. Transfer the cooked plums along with their simmering liquid into a high-speed blender. Blend on high for 1 minute until completely smooth.
  9. Pour the purée through a fine-mesh strainer into a glass pitcher, using the back of a ladle to press the juice through. This removes the tough skin fragments, leaving you with a silky, premium nectar.
  10. Balancing the Notes
  11. Stir in the fresh lemon juice and a tiny pinch of salt. This cuts through the intense sweetness and brightens the overall flavor profile.
  12. Taste and adjust sweetness if necessary. If the juice is too thick for your preference, you can stir in an additional 1/2 cup of chilled filtered water.
  13. Chilling & Presentation
  14. Place the pitcher in the refrigerator for at least 1 hour until thoroughly chilled.
  15. To Serve:
  16. Fill highball or stemmed glasses with crushed ice. Pour the chilled plum juice over the top. Garnish with a fresh sprig of smacked mint and a thin wheel of fresh plum or lemon on the rim.

Notes

💡 Pro Tip: To prevent your plum juice from tasting bitter, never blend the plums with their pits, and always strain the pulp through a fine-mesh sieve after blending. This removes the tough skin fragments that carry the bitter, sharp notes, leaving you with a perfectly smooth, bright, and refreshing gourmet nectar!
