Phase 1: Preparing the Chicken Patties
Mix the Meat: In a large mixing bowl, combine the ground chicken, minced onion, ginger-garlic paste, white pepper, paprika, salt, and heavy cream. Mix gently with your hands until just combined—do not overwork the meat, or the patties will become tough.
Shape: Divide the mixture into 4 equal portions. Shape them into smooth, round patties slightly wider than your braided buns, as chicken patties tend to shrink slightly during cooking. Press a slight dimple into the center of each patty to prevent them from puffing up.
Chill: Place the patties on a tray lined with parchment paper and chill in the refrigerator for 10–15 minutes to firm up.
Phase 2: Searing the Patties & Toasting Buns
Cook the Patties: Heat 2 tablespoons of oil in a heavy non-stick skillet or cast-iron pan over medium-high heat. Place the chilled chicken patties in the pan. Cook for about 4–5 minutes on the first side until a deep, golden-brown crust forms. Flip and cook for another 4 minutes until completely cooked through (internal temperature reaches 74°C/165°F). Remove and let them rest for 2 minutes.
Toast the Buns: Slice your braided knot buns horizontally. In the same pan with the residual juices, place the buns cut-side down for 1 minute until lightly toasted and warm.
Assembly & Presentation
Base Layer: Place the bottom half of the toasted braided bun on a rustic wooden serving board or white plate. Spread a generous tablespoon of mayonnaise or garlic aioli.
The Fresh Crunch: Lay a thick slice of juicy tomato followed by a crisp, folded piece of fresh green lettuce.
The Star Element: Place the hot, pan-seared chicken patty directly over the lettuce.
The Sauce Crown: Drizzle a generous amount of classic tomato ketchup over the warm patty so it beautifully cascades down the sides.
Finish: Top with the distinctive braided knot bun crown and press down gently.
Serving Suggestion
Serve immediately alongside a generous helping of hot, salted golden French fries and a side dipping bowl of garlic sauce or honey mustard.
