Ingredients
  

  • ¾ cup 180 mL 100% Fruit Juice (Tart cherry, pomegranate, or berry juices work best. Avoid fresh pineapple, kiwi, or papaya, as their enzymes break down gelatin.)
  • 3 tbsp approx. 30g / 4 packets Unflavored Gelatin Powder (High-quality, bloom strength 200 or higher preferred)
  • 2 tbsp Honey Agave Nectar, or Light Corn Syrup (Provides a glossy finish and prevents sugar crystallization)
  • 1 tbsp Fresh Lemon Juice Balances sweetness and brightens flavor
  • Optional: ¼ tsp Citric Acid For a sour kick and prolonged shelf life

Equipment

  • 1 Small, Heavy-Bottomed Saucepan Prevents the sugar and gelatin mixture from scorching
  • 1 Silicone Gummy Molds Essential for easy removal
  • 1 Food-Grade Liquid Dropper or Pipette For clean, precise filling of the molds
  • 1 Fine Mesh Strainer To ensure a crystal-clear liquid texture free of air bubbles or un-dissolved gelatin clumps
  • 1 Small Wire Whisk For gentle mixing without incorporating excess air.

Method
 

  1. Blooming the Gelatin (Crucial Step)
  2. Pour the cold fruit juice and lemon juice into your small saucepan before turning on the heat.
  3. Evenly sprinkle the gelatin powder across the surface of the liquid. Let it sit undisturbed for 5 to 7 minutes. The powder will absorb the liquid and look wrinkly—this is called "blooming" and guarantees a smooth, clump-free texture.
  4. Melting and Syruping
  5. Place the saucepan over low heat.
  6. Add your honey or agave (and citric acid, if using).
  7. Whisk the mixture very gently to avoid creating foam or air bubbles. Stir continuously for 3 to 5 minutes until the gelatin completely dissolves and the liquid becomes perfectly smooth and translucent.
  8. Chef's Note: Do not let the mixture boil. Boiling breaks down the protein structure of gelatin, which will prevent your gummies from setting properly.
  9. Straining and Molding
  10. Remove the pan from the heat. Pour the hot liquid through a fine-mesh strainer into a small measuring cup or heat-safe bowl to catch any remaining foam or un-dissolved bits.
  11. Using your liquid dropper, quickly fill each cavity of your silicone molds to the top. Work efficiently before the mixture begins to cool and thicken.
  12. Setting and Curing
  13. Carefully transfer the filled molds to the refrigerator. Let them chill completely flat for 2 to 3 hours until firmly set.
  14. Pop the gummies out of the silicone molds.
  15. Optional Commercial Tip for Chewiness: To give them a professional, chewy bite rather than a "Jell-O" texture, stand them upright on parchment paper for 12 to 24 hours at room temperature. This air-dries them and evaporates excess moisture.
