  • Fried onion Pyaz: 2 tbs

  • Coriander powder Dhania powder: 1 tsp
  • Salt Namak: ½ tsp or to taste
  • Cumin powder Zeera powder: 1 tsp
  • Roasted chickpea powder Chanay ka powder: 2 tbs
  • Bread slices: 2
  • For the Curry Gravy:
  • Corn oil Rafhan corn oil: ½ Cup
  • Grinded onion Pyaz: 1 medium
  • Ginger-garlic paste Adrak lehsan paste: 1 tbs
  • Grinded tomato Tamatar: 2 medium
  • Turmeric powder Haldee powder: ½ tsp
  • Cumin powder Zeera powder: ½ tsp
  • Garam masala powder: ½ tsp
  • Kashmir red chili powder Kashmiri lal mirch: 1 tsp (optional)
  • Coriander powder Dhania powder: 1 tsp
  • Nutmeg powder Jaifil powder: 1/4 tsp
  • Mace powder Javatri powder: 1/4 tsp
  • Red chili powder Lal mirch powder: ½ tsp or to taste
  • Poppy seeds powder Kashkhash: ½ tbs
  • Crushed fried onion Pyaz: 2 tbs
  • Green chilli paste Hari mirch: ½ tbs
  • Salt Namak: 1 tsp or to taste
  • Whisked yogurt Dahi: 1 Cup
  • Water Pani: 2 & ½ Cups or as required
  • For Garnish:
  • Fresh coriander Hara dhania: Chopped
  • Green chilli Hari mirch: As required

Equipment

  • 1 Food Chopper / Processor For finely combining the mutton mince and spices for the meatballs.
  • 1 Kitchen Scale (Optional) For portioning the kofta mixture evenly (44 grams per meatball).
  • 1 Wok / Heavy-Bottomed Pot For frying the base ingredients, preparing the gravy, and simmering the koftas.
  • 1 Spatula / Cooking Spoon For stirring the gravy base.

Method
 

  1. Step-by-Step Instructions
  2. Step 1: Prepare the Kofta Mixture
  3. In a chopper, add the mutton mince, ginger-garlic paste, fried onion, red chili powder, coriander powder, salt, cumin powder, chickpea powder, and bread slices.
  4. Chop everything together until the mixture is thoroughly combined and smooth.
  5. Step 2: Shape the Meatballs
  6. Lightly grease your hands with corn oil.
  7. Take portions of the mixture (approximately 44 grams each) and roll them firmly between your palms to shape them into equal-sized meatballs (yields about 14 meatballs). Set aside.
  8. Step 3: Build the Gravy Base
  9. Heat corn oil in a wok, add the grinded onion, and mix well.
  10. Add the ginger-garlic paste, mix thoroughly, and sauté for 4 to 5 minutes.
  11. Stir in the grinded tomato and cook for another 2 to 3 minutes.
  12. Step 4: Spice and Yogurt Integration
  13. Add the turmeric powder, cumin powder, garam masala powder, Kashmiri red chili powder, coriander powder, nutmeg powder, mace powder, red chili powder, poppy seeds powder, crushed fried onion, green chilli paste, and salt. Mix well.
  14. Pour in the whisked yogurt, mix thoroughly, and cook for 4 to 5 minutes until the base starts coming together.
  15. Pour in the water, mix well, and bring it to a boil. Cover the wok and let it cook on a low flame for 4 to 5 minutes.
  16. Step 5: Simmer the Koftas
  17. Gently drop the prepared meatballs into the simmering gravy and mix very gently to avoid breaking them.
  18. Cover the wok and cook on a low flame for 12 to 15 minutes until the meatballs are fully cooked and tender.
  19. Add the chopped fresh coriander and green chilli on top, cover, and let it simmer for 2 minutes.
  20. Step 6: Serve
  21. Garnish with extra fresh coriander and serve hot with naan, roti, or rice.

Pro Tip:Gentle Handling: Once the koftas go into the simmering gravy, avoid aggressive stirring. Gently swirl the wok or use a spatula very carefully to coat them without breaking the delicate meatballs.
