Gentle Simmer: Place the cleaned mutton, aromatics, and whole spices into a large pot and cover with 3–4 liters of cold water.
Skimming: Bring to a gentle boil and skim off any foam that rises to the surface during the first 30 minutes; this is a crucial step for a premium, clean-tasting stock.
Extracting Flavor: Reduce the heat to low and let it simmer for 3–4 hours, allowing the marrow and juices to fully infuse the broth.
