- In a mixing bowl, combine the clarified butter and sugar.
- Beat the mixture vigorously until it reaches a light, pale, and creamy consistency.
- Incorporating the Dry Aeration
- Place a sifter over the creamed base.
- Add the all-purpose flour, gram flour, semolina, pink salt, cardamom powder, and baking powder.
- Sift together directly into the bowl to ensure no lumps remain and the leavening agents are evenly distributed.
- Dough Development
- Mix the ingredients until the texture becomes crumbly.
- Gently knead the mixture until a uniform dough is formed.
- Incorporate the almonds and mix well.
- Cover the dough with cling film and allow it to rest for 15–20 minutes to hydrate the flours.
- Portioning & Styling
- Portion the mixture into small quantities, approximately 40g each.
- Shape into a smooth ball, place an almond in the center, and press down gently.
- Prepare the egg wash by whisking the egg yolk and milk in a separate bowl.
- Apply the wash evenly across the top of each ball using a pastry brush (this recipe yields approximately 9 servings).
