  • For the Qorma Base & Chicken
  • Fat & Aromatics: ¾ Cup Ghee 2 large onions (sliced)
  • Whole Spices: 2 Black cardamoms 5–6 Green cardamoms, 3–4 Cloves, ½ tsp Black peppercorns, 1 Star anise, 2–3 Cinnamon sticks, 1 tsp Black cumin seeds, 3 Bay leaves
  • Paste: 2 Tbsp Ginger-garlic paste
  • Protein: ½ kg Chicken Qorma cut
  • Spices & Seasoning: 1 tsp Salt or to taste, 1 tsp Paprika powder, 2 Tbsp Roasted coriander powder, 2 tsp Red chili powder, ¼ tsp Yellow food color (zarda ka rang)
  • Liquid & Dairy: ½ Cup Water or as required, 1 Cup Sour yogurt
  • For the Finishing Touch
  • Aromatics & Spices: ¼ tsp Nutmeg powder jaifil, ¼ tsp Mace powder (javatri), ¼ tsp Garam masala powder
  • Enhancers: ½ tsp Butter 1 tsp Kewra water
  • Garnish: Blanched almonds Fresh ginger (julienne)

Equipment

  • 1 Heavy-Bottomed Pot or Handi Ideal for evenly frying onions and simmering the rich qorma gravy without scorching.
  • 1 Slotted Spoon Essential for removing the fried onions cleanly from the hot ghee.
  • 1 Paper Towels Necessary for draining and crisping the fried onions.
  • 1 Wooden Spoon / Spatula For gentle stirring without breaking the chicken pieces.
  • 1 Measuring Spoons/Cups To ensure precise spice ratios for that signature balance of flavors.

Method

  2. Crisp the Onions: In a pot, heat the ghee until melted. Add the sliced onions and fry until they turn an even golden brown. Remove them, set them aside, and let them cool completely. Once cooled, crush the fried onions and set aside.
  3. Bloom Whole Spices: In the same pot with the remaining ghee, add the black cardamom, green cardamom, cloves, black peppercorns, star anise, cinnamon sticks, black cumin seeds, and bay leaves. Fry for 1 minute until fragrant.
  4. Sear the Chicken: Stir in the ginger-garlic paste and mix well. Add the chicken (qorma cut) and fry until the meat changes color. Cover and cook for 4–5 minutes.
  5. Spice Integration: Add the salt, paprika powder, roasted coriander powder, red chili powder, and yellow food color. Mix thoroughly and sauté for 2 minutes.
  6. Add Water & Yogurt: Pour in the water and mix well. Turn off the flame temporarily to prevent curdling, then whisk in the sour yogurt and mix well for 2 minutes.
  7. Simmer: Turn the flame back on, add the nutmeg powder and mace powder, mix well, and cook for 2–3 minutes.
  8. Incorporate Onions: Stir in the fried and crushed onions, bring the mixture to a boil, cover, and cook for 2–3 minutes. Afterward, uncover and cook on high flame for another 2–3 minutes to thicken the gravy.
  9. Final Finishing: Finish the dish by stirring in the garam masala powder, butter, and kewra water.
  10. Garnish & Serve: Garnish with blanched almonds and fresh ginger strips before serving hot with fresh naan or Taftan.

Notes

Pro Tip:For the Perfect Onion Crunch: When frying your onions, make sure to evenly spread them out on a paper towel immediately after removing them from the ghee to eliminate excess oil, and let them completely cool. This guarantees they become crisp, which is the secret to getting that authentic texture when crushed into the qorma.
