- Step 1: Fry the Onions (Barista)Heat the oil/ghee in your main wide, heavy-bottomed biryani patila.
- Fry the sliced onions on medium-high heat until they reach an even, gorgeous golden brown.
- Remove 1/3 of the onions for the final garnish and set aside on a paper towel.
- Step 2: Cook the Rich, Tangy Chicken Base
- To the remaining onions in the pot, drop in the whole garam masala spices and ginger-garlic paste. Sauté for 1 minute until fragrant.
- Add the chicken pieces and sear on high heat for 5 minutes until the meat turns opaque.
- Stir in the chopped tomatoes, your freshly ground Shahi Aromatic Spice Blend, the biryani masala, red chili powder, turmeric, green chili paste, and salt.
- Add the soaked dried plums (aaloo bukhara) along with their soaking water. Sauté (bhunno) for 5 minutes on medium-high heat until the tomatoes begin to melt down and the plums soften slightly.
- Reduce heat to low, add the whisked yogurt, and mix well. Cover and let it simmer on medium-low heat for 12–15 minutes until the chicken is 80% tender.
- Uncover, turn the heat up, and cook down until you have a thick, rich gravy coating the chicken, and a glistening layer of oil separates on top.
- Toss in the chopped mint, coriander, whole slit green chilies, and lemon juice. Turn off the heat.
- Step 3: Parboil the Basmati Rice
- In a separate large pot, bring 4 liters of water to a rolling boil with the salt, whole spices, and lemon juice.
- Add the soaked and drained basmati rice.
- Cook until it is exactly 70–80% done (around 6–7 minutes). It should be elongated but still have a firm bite in the center. Drain immediately into a colander.Step
- 4: Assemble & Steam (Dum)
- Leave the thick, intensely aromatic chicken masala base (complete with the plumped dried plums) at the bottom of the main pot.
- Layer the hot, steaming parboiled rice smoothly over the chicken.
- Drizzle the orange food color patchwise across the top, followed by the kewra water.
- Scatter your reserved crispy fried onions, fresh mint, coriander, and thin lemon slices over the surface.
- Cover with a tight lid wrapped in a clean kitchen towel to capture all the steam. Cook on high heat for 5 minutes, then place a heavy skillet (tawa) underneath, lower the heat to the absolute minimum, and let it Dum for 15–20 minutes.

Pro Tip:Chef's Note: The dried plums will have absorbed the rich, spicy juices of the chicken curry, transforming into little pockets of sweet-and-sour flavor throughout the rice. When plating on your round silver tray, make sure a few of these glossy, dark plums are nestled visibly alongside the chicken drumsticks on top for that irresistible commercial look!
